Cooking method

  • In the original source, the cooking process is slightly different. The first time I did it properly, heating the egg mixture. But, I don’t like this fuss, so the second time I did it my own way and decided that the result, if different, then it remained invisible to me.
  • YES! I have given the norm of products for 25 cupcakes and in such a measurement, as I'm used to, I translate everything into grams.
  • Beat eggs, yolks and sugar in a food processor, beat well! I heat the milk, melt the butter in it. Sift flour with baking powder. Pour the beaten eggs into a large bowl, add milk and butter, stir gently. In three steps I add, sifting again, flour. Stir with a spatula, from bottom to top, quickly but not aggressively.
  • I bake in paper tins, bottom diameter 50mm / height 30mm, which I insert into iron tins. I have 25 pieces on a baking sheet. The weight of the blanks obtained is approximately 1 kg.

  • Then do impregnation
  • 2 tsp brew ground coffee in 150 ml. water add 1 tbsp. l. Sahara. Cool, mix with alcohol (I add alcohol)
