butter 110 g
sugar 125 g
egg yolks 2 pcs
almond 100 g
egg whites 2 pcs
cream 33% fat 50-70 ml
baking powder 0.5 h l
rose-scented sugar 0.5 h l
lychee in syrup (pieces) 80-100 g
powdered sugar 1 tbsp

mascarpone 250 g
lychee syrup 50 ml

White chocolate 150 g

raspberry 100-150 g
dry rose buds 6-7 pcs

Cooking method

  • 1. Melt chocolate with 100 ml of cream in a water bath, add the remaining cream in several steps, add syrup and aromatic sugar. Cover with cling film and refrigerate for at least 4 hours.

  • 2. Peel and grind the almonds into very fine crumbs. Add the egg whites, icing sugar and beat with a hand blender until a paste.
  • 3. Beat the softened butter with sugar into a fluffy mass, add the yolks one by one, without stopping whipping. Continuing to beat at low speed, add almond paste in several steps. Add flour, mixed with baking powder and aromatic sugar, cream and stir until smooth. Introduce the lychee, cut into small pieces, mix gently again and arrange in the molds. Put a raspberry in each, slightly pressing it into the center. Put in an oven preheated to 180 degrees and bake until a dry skewer.

  • 4. Grind dry rose buds in a coffee grinder and mix with powdered sugar and aromatic sugar.

  • 5. Beat the thickened chocolate-creamy mass (start beating at low speed), add mascarpone in several steps. Apply the ready-made cream to completely cooled cupcakes using a pastry bag, spread out the remaining raspberries and decorate with pink sprinkles.

If you try and manage to buy fresh lychees, then use them. Unfortunately, I didn't succeed.Therefore, some of the aroma is lost. But believe me, it's just magical!

And sugar, if you can't buy it in the store, can be made at home by analogy with vanilla. Finely grind the buds (you can grind with your fingers, they crumble very easily) and mix with powdered sugar. Stir and pour into a jar, add a few whole buds and close tightly. After a few days, you can use it - the icing sugar will be saturated with the scent of a rose.
