  • Stir with chopped garlic and chopped parsley before serving. I used coarsely crushed garlic when stewing vegetables.

What you need:

Pearl barley 2 cups
Broth meat, chicken 5 cups. I used broth from the freezer with chicken pieces.
Oyster mushrooms or other fresh 300 grams. I had 5 champignons.
Bulb onion 1 pc.
Salt, a little black pepper.
Fresh garlic 2-3 cloves (crush with a knife)
Fresh chopped parsley 1 tbsp. l.

What to do:

Rinse the pearl barley and soak for 3-6 hours. 3 hours are enough.

Prepare any meat broth in advance, good from chicken, ready-made from the freezer is suitable. Advice - when preparing broth for the first courses, make 0.5-1 liters more and pour into a portion container and put it in the freezer.

And of course this water needs to be washed off. I wash in multiple waters. Then I fill it with a small amount of water, just to cover the cereal and set it to swell, so all the water is absorbed by the cereal, there is nothing to drain, everything goes into the pan.

From experience I know that it is better to soak the cereal for 1-3 hours first, so that it has time to absorb moisture, and then does not pull it out of the liquid added to the porridge during cooking, and it cooks faster. If you do not do this, there is a possibility that the cereal may not be partially cooked - some will be ready, some will remain undercooked. Recently I came across this when I put some unsoaked cereals at random. It turned out tasteless.
Having saturated the water in advance, the soaked cereal does not waste time on its own soaking and swelling when cooking porridge, but immediately begins to absorb all the useful juices during cooking, soak in them, and remains juicy without taking a lot of moisture from the porridge during cooking. And when the porridge is still heated on heating, it will still swell, but after absorbing everything valuable, the taste improves.

Porridge water - 500 ml
Sour cream - 150-200 grams

At this stage of cooking, you get an excellent crumbly pearl barley porridge with mushrooms, which can be served as such.

But let's continue to cook further.
