Chocolate lingonberry cake

Ingredients

For the biscuit:
4 eggs
3 tbsp. l. hot water
100 g granulated sugar
1 pack. vanilla sugar (one and a half tbsp. l.)
100 g wheat flour
25 g starch
10 g cocoa powder (up to 3 tbsp. L.)
ground cinnamon (pinch)
1.25 tsp baking powder for dough
For filling:
100 g of Babaevsky bitter chocolate)
100 g of finished milk glaze (I took Babaevsky Bitter again, because I don't like white chocolate. Or you could just take white chocolate)
1 can of lingonberry (395 g) (any sour berry, mashed with sugar or jam. I took cranberries with sugar)
2 tbsp. l. lemon juice
800 g whipping cream
3 pack. fixer for cream
For decoration:
100 g medium-bitter chocolate

Cooking method

  • one . To make a biscuit: beat eggs with water (1 min., Max. Speed) until frothy. Mix granulated sugar and vanilla sugar,
  • gradually (within 1 minute) add to the eggs, beat for another 2 minutes.
  • 2. Mix flour with cocoa and baking powder, add a pinch of cinnamon. After sifting, pour into the egg mixture and stir (min. Speed). Put the dough in a split form (D 26 cm), grease and cover the bottom with baking paper, flatten. Place the dish on the wire shelf in the oven.
  • Oven about 180 ° C (with preheating). Baking time: about 25 min.
  • 3. Place the baking dish on a wire rack lined with baking paper and cool the crust. Remove the paper from the top of the crust, turn it over and cut it in half horizontally.
  • 4. To prepare the filling: break the icing into pieces, melt in a saucepan in a water bath and cool. Mix the lingonberries with lemon juice. The bottom of the cake
  • transfer to a dish, distribute the lingonberries so that 1 cm from the edge remains free. Whisk the cream together with the fixative until thick. 2 tbsp. l. mix cream with
  • cooled glaze and gradually add to the rest of the cream.
  • 5. Spread half of the chocolate cream on top of the lingonberries, cover with the other half of the crust. Brush the surface and edge of the cake with the remaining chocolate cream.
  • Put the cake in the refrigerator for 2-3 hours.
  • 6. For decoration: chop and dissolve the chocolate, pour it onto a flat surface and wait until it is completely solidified (not in the refrigerator). Wide shoulder blade
