Chocolate cream

Ingredients

Dark chocolate
high in cocoa
100 g
Milk 500 ml
Yolks 4 things
Sugar 110 g
Butter 60 g
Potato starch 35 g
Cocoa powder 1 tsp
Pistachios for garnishing as desired

Cooking method

  • Break the chocolate, add it to the milk, put on the fire and heat while stirring until the chocolate melts, as soon as the mixture starts to boil, remove from the heat.
  • Grind the yolks with sugar, starch and cocoa, stirring, slowly add the yolk mixture to the hot milk-chocolate mixture (my yolk mixture turned out to be quite thick, so I poured a little milk from the pan in a thin stream), turn it on on a low heat, and heat while stirring the mixture will not thicken, I did not even put it on fire, it thickened so much.
  • Then transfer the mixture to a bowl, add butter, and beat everything in with a mixer (I put it in a bowl of cold water).
  • Then spread the mixture into vases, cool in the refrigerator.
  • Serve sprinkled with grated pistachios.
