Pancakes on Viennese dough

Ingredients

OPARA:
Eggs 2 pcs.
easy warm milk 0,5 l
sugar 2 tbsp. l.
fresh yeast 6 g
DOUGH:
salt 0.5 tsp
Butter 20 g
Flour 150 g (1 tbsp. = 250 ml)
vegetable oil 4 tbsp. l.

Cooking method

  • I thought that if you can put dough for the night for butter dough (Vienna dough), then you can also for pancakes. And I figured out such a recipe.
  • The preparation took a minimum of my efforts, and the result was very pleasing. Very thin and thick pancakes are made equally well from this dough.


  • Mix eggs with sugar, yeast with milk. Combine both mixtures and leave for 12 hours (I leave it overnight). In the morning add salt, soft butter, flour, and knead the batter. You just need to mix the ingredients, or put everything together in a blender and beat.

  • Leave the dough in a warm place until it becomes like this (~ 40 minutes):

  • To speed up the process, you can use a yoghurt maker or slow cooker.

  • Then add vegetable oil, stir, and you can bake pancakes.

  • The thinner the pancake, the more "perforated" it will be.

  • I grease the pan with oil only the first time, then there is enough oil in the dough.
  • You can 1-2 tbsp. l. (and more, to taste), replace flour with buckwheat, or oatmeal.

  • I really like that the frying pan "does not burn", and there is no fumes in the kitchen.

As a substitute for buckwheat flour, you can use baby food "Dairy-free buckwheat porridge". Make sure it is milk-free and sugar-free.
Possible options: "HEINZ BUCKWHEAT PURPOSE, LOW ALLERGENIC",
"KASHA BABY SITTER BUCKET WITHOUT MILK",
"HIPP porridge buckwheat WITHOUT MILK" and so on.
These cereals are sold in baby food departments.

The yeast played well, although the flour did not stir in the corners in the HP, you see, only thick dough can be made in it, but it's a pity, the idea was good ...
The pancakes turned out to be very perforated, only they seemed a little sour to mine, so I then made it with a bake (pickled cucumbers, banana, apple).
I will do more, just increase the sugar a little, and still I will do, as per the recipe, the last proofing for 40 minutes in a cartoon.
