Cooking method

  • Pfitzauf is a traditional Swabian egg baked product. Similar recipes in the USA are called Popovers, in England Yorkshire pudding. The dough is rather liquid, it is baked in the oven in special Pfitzaufformen from glazed clay. When baking, the dough rises far beyond the edges of the mold. Pfitzauf is usually served hot as a main course with vanilla sauce or compote.

  • We turn on the oven at 200 degrees. Mix flour, eggs, a smaller part of milk, salt and sugar with a whisk, add the rest of the milk heated to 50-60 degrees, mix. Molds need to be WELL smeared with butter, otherwise the bottom will burn! Distribute the dough evenly over the molds. Bake in a well-heated oven for 25-30 minutes, then over low heat (reduced to 100 degrees and turned on the bottom + blowing) for another 10-20 minutes, until golden brown. If the Pfitzauf itself does not lag behind the shape, then carefully pry it along the edge with a knife.

cheers cheers! Finally, these pancake buns did not fail for me! Large, hollow, baked, choux pastry. I love these pacifiers! From the advice to Pfitzauf, I deducted that most of the milk needs to be heated, perhaps this affected the non-falling, or maybe the mugs / molds ... always baked in silicone and they fell after baking. I'll try it in silicone, I'll report back. The site has a variant of popovers and German pancakes with a different recipe.

Irsha, yes, popovers are the same, I forgot to write in the recipe that this is an analogue of popovers, but they always fell off with me, this recipe is different than on the forum (the composition of products with oil and proportions, by the way, fell off there), perhaps they are due to the ceramic form baked better ..... I always made them in silicone .... you need to try this recipe in silicone
