Ingredients

1 pack of cottage cheese (200-250g)
1 small courgette / zucchini
3 eggs
100g butter
200-220g flour
1 rounded teaspoon of baking powder
small bunch of dill
salt pepper

Cooking method

  • Immediately turn on the oven at 200 ° C.
  • Mix cottage cheese and eggs.
  • Melt the butter, let it stand, it cools.
  • Sift flour into another cup and mix with baking powder.
  • Grind the zucchini / zucchini on a coarse grater.
  • Finely chop the dill.
  • Squeeze the excess liquid out of the zucchini, mix with the dill and pour into a cup with the curd-egg mixture. Add oil. Salt and pepper. Mix. Add all the flour and stir quickly.
  • Fill the forms 2/3 full with dough. And into the oven. We are waiting for 35-40 minutes.
  • Do not open the oven during the process! Otherwise, the dough will "fall off".
  • These muffins are very tender and moist. If you want more crumbly, then add flour 50 grams.
  • PS I had a fat homemade cottage cheese. I kneaded it well with a fork. Grated zucchini turned out 400 grams. Salt put a little less than a teaspoon. I did not put dill. Baked in silicone molds at a temperature of 180 degrees.
  • It turned out 12 pieces. I have two silicone layers with 6 molds in each.
