Ingredients
Cherry 1.4 kg
Unpeeled lemons 4 pcs.
Apple juice without sugar 600 ml
Peeled pistachios 100 g
Gelatin sugar 1 kg
Cognac 100 ml
Cooking method

1. Free the cherries from seeds and pour into a saucepan, and put the seeds in a saucepan. Squeeze the lemons and pour the resulting juice over the cherries. Chop the zest and mix with the seeds. Cover with water and bring to a boil. Reduce heat slightly and simmer mixture for about 45 minutes to melt the zest.
2. In the meantime, add apple juice and pistachios to a saucepan with cherries, bring the mixture to a boil. Reduce heat and simmer, covered, for about 30 minutes. Pass the gruel from the saucepan through a fine sieve into a saucepan with cherries, while trying to squeeze the liquid out of the gruel as much as possible. Mix well and cook for 5 minutes.
3. Add sugar and stir until dissolved. Cook the mass for 5 minutes. Add the cognac and cook for about 4 minutes, until the mixture thickens. Remove the foam from the jam, fill the jars, close them with sealed lids.
