Ingredients

Biscuit:
eggs 3 pcs
sugar 90 g
flour 90 g
Shortcrust pastry:
flour 300 g
loosening powder 7 g
powdered sugar 70 g
butter 280 g
boiled yolks 3 pcs
almond flour 50 g
salt 1.5 g
Cream:
cream 30% or 33% 500 ml
powdered sugar 2 tbsp. l.
gelatin 10 g
water 50 ml
Jam for shortbread: 50 g
For the layer:
cherry juice 200 g
corn starch 30 g
water 100 g
sugar 50 g
frozen cherries 500 g
Glaze:
powdered sugar 60 g
Cherry juice 1 tbsp. l.
lemon juice

Cooking method

  • Delicate cake with creamy cream, interlayer of cherries, I tried it in one of the pastry shops in Cologne. I liked this cake so much that when I came to the hotel, I quickly wrote down its composition, so that when I returned from a trip I could prepare the same cake.
  • This cake has two types of dough, biscuit and tender shortbread saber, creamy cream and cherry interlayer.
  • We bake a biscuit from the specified products in a mold with a diameter of 23 cm.
  • The biscuit is not high, that's what we need:
  • Creamy cherry cake
  • After cooling, cut into two cakes.
  • Cooking shortbread dough.
  • Three chilled butter on a coarse grater into flour, mix into crumbs -

  • Add baking powder, icing sugar, almond flour (you can make it by grinding almonds in a grinder).
  • Boiled yolks, rubbing through a strainer.
  • Kneading the dough

  • We put it in the refrigerator for an hour.
  • From this dough we need to bake two cakes, 23 cm in diameter. Bake at 180 degrees. 10 min.
  • It is convenient to roll it out between two sheets of parchment, like this-

  • We prepare the cherry layer from previously thawed cherries, the juice that appeared during defrosting, we collect from it, we will cook jelly:

  • and boil for a few minutes.
  • We set to cool.
  • Soak the gelatin.
  • Whisk the cream with powdered sugar, then pour in the gelatin in a thin stream and mix.
  • Assembling the cake
  • Gently put the shortbread into the split form, (we put the confectionery tape on the side of the mold) grease it with a thin layer of cherry jam and put the biscuit cake on it.

  • Put the cherries on the biscuit, 2cm away from the side. We fill this space with cream, and then cover the cherry with cream:

  • Then shortbread, cover with glaze, let it harden a little and decorate the top
