Buns to Bernu maizite

Ingredients

Dry yeast - 1.3 tsp
Wheat flour - 400 gr.
Salt 1 tsp
Sugar 3-4 tbsp l
Butter or margarine - 60 gr.
Egg - 1 pc.
Milk - 100 ml
Water - 100 ml
Powdered milk - 1.5 tsp.

Cooking method

  • Dough program - 2 hours 20 minutes. Then, in addition to the program, the proofing of the dough in a closed oven - 2 hours. Divide the dough into eight pieces. Form balls. Let them stand for 5 minutes. Form the balls again after 5 minutes. Cover with foil, let stand for 1 hour. Then brush with beaten egg and sprinkle with nuts. Baking in the oven at a temperature of 190 gr. After 15 minutes, move the baking sheet higher for five minutes to brown. Sprinkle hot rolls with icing sugar.

I will give a GOST recipe.

Recipe:
1 kg x / p flour c. from.
60g compressed yeast,
12g salt
150g sugar
150g butter
250g skim milk
100g eggs in dough,
0.2 g of lactic acid calcium.
Egg for lube, crushed almonds for finishing, powdered sugar.

Sponge dough.
OPARA:
400g flour
40 g of shivers
150g skimmed milk
150g of water or until a dough is obtained with a humidity of 45%. 3-4 hours of fermentation at 28-30C to an acidity of 2.5-3.5 degrees.

Dough: 1.5-2 hours of fermentation at 29-31C, until acidity is 2-2.5 degrees, the moisture content of the dough is not more than 35%. Pieces of dough weighing 85-90 g are rounded, cut along the radius once. Proofing 50-100 min at 35-40C, with air humidity 80%. Brush with egg, sprinkle with crushed almonds. Bake for 14-25 minutes at 180-230C. Sprinkle with icing sugar after baking.

The first time I made a dough with 300 g flour. It turned out six fluffy, rather large buns. I laid them out quite wide on a baking sheet, but they increased so much in volume that they still grew together in places.
I made the dough in a bread maker on the Dough program, the time was 2 hours 20 minutes. At the end of the program, the stove was not turned off, and the dough stood on the Heating for another two hours. When I opened the lid, I just gasped. The dough was coming out of the bucket ... And this is 300 grams of flour. Baked at 190 degrees. In my gas oven, there are 4, on the third level from the bottom. After 15 minutes, I moved it to a higher level. And another five minutes before browning. The buns are simply unusually airy. Many thanks to Lyuda.

PS Of course, I didn't have any calcium lactate, so I just added a teaspoon of milk powder to the dough.
