In fact, I am a supporter of well-cooled rolls, but these had to be blown alternately on them and on my fingers to eat three pieces at once from the oven

I have Panas 2501, today I made these wonderful buns !!! MASTERLY !!! There was no liquid milk - increased the amount of dry milk to 3 tbsp. l. and butter replaced with vegetable-3 tbsp. l.

Mix water with boiled milk and heat to 30-35C. Pour in 1 tsp. sugar and 1 tsp. yeast. Leave on for 1 hour.
Next, knead the dough and leave it to ferment for 3 to 5 hours with 2-3 strokes.

Weigh the ripe dough and divide into 6 equal portions. Pull each into a ball and leave to lie on the table for 5 minutes. Pull each piece back together into a tight ball and place knotted down on a baking sheet for proofing. Make a deep cut along the radius on each ball.

Proofing for 50-60 minutes at 40C. Brush with egg, sprinkle with almonds and bake for 15 minutes at 375F with convection air.Sprinkle the finished buns with icing sugar.
