Sunflower bread

Ingredients

Peeled rye flour 150 g
Whole flour 150 g
Wheat flour, premium 150 g
Water 310 ml
Salt 1 1/2 tsp
Brown sugar 1 tbsp. l.
Non-refined sunflower oil. 3 tbsp. l.
Dry yeast 1 1/2 tsp
Dry leaven 1 tsp
Ground cumin 2 tsp
Cumin seeds 1 tsp
Ground coriander 1 tsp
Roasted sunflower seeds 50 g

Cooking method

  • Place a spatula for rye bread. Put all the ingredients in a cotton bucket.
  • Optionally, 1 hour before baking, you can grease the dough with milk or an egg and sprinkle with seeds.

Yana, baked bread according to your recipe. I made minor changes, due to the lack of whole grain flour, I took Belovodye wallpaper wheat flour and wheat germ. Didn't put in coriander, only cumin. And I had the liquid from 110 g of homemade yogurt and 200 g of water. I think these are not so significant changes. The bread turned out to be excellent, very tasty, everyone in the family liked it. Thank you for your recipes. After mustard, which is one of the favorites in our family, I boldly bake according to your recipes, I really like that they are so verified. I think that I will bake this bread more than once.
I also wanted to ask you: what do you think, if instead of whole grain flour you put oatmeal flakes and wheat germ, how will this affect the bread?

barbariscka, I, too, now, when I bake this bread, replace French flour with "Belovodye". This is not noticeable in finished bread.

You will laugh, but I found the recipe for this bread in a knitting magazine for the 90s. Then in the middle of the magazine there were tabs with culinary recipes. I slightly altered this recipe and baked bread using it. I liked it and I put it here. I am very glad that you liked it too!

It is better to add one oat flakes, 50 grams, no more, replace the rest with wheat flour. Bread does not rise well from wheat germ, so it is better not to put them in this bread. But if you still want to put them, add panifarin before.

Thanks for the recipe! For my taste, bread tastes better with 1 tbsp. l sourdough. In addition, I put 1 teaspoon of ground cumin and sprinkle caraway seeds on top of the bread. The dressing did not change, but emphasized the sunflower taste of the bread.

Finally, I got a whole grain bread that was milled in 20 minutes. And - they usually lie for weeks ... I took whole-grain rye and whole-grain wheat "diamart" and wheat grade 1. And a little bit of red malt. Instead of sourdough - apple cider vinegar.
Now he can taste two rye and 2 wheat for 100 each .... But this is already a matter of technology. You can experiment with such a speed of eating. The recipe is really very well measured.
