My new experiment: Multi-flour bread with nuts and seeds

If you don't add malt, you get gray bread. It is advised to dry kvass (we also do not sell it) or replace water with kvass without gas from bottles. I think it is also possible with gas, because there is bread on carbonated water (I came across somewhere on the forum). Or as a last resort, you can wait until the gas is released. Try it and write to us. I still have malt. Enough for a month. And then you have to experiment.

3ay4ik with gases it is even better, I now bake rye only on mineral water of carbonated bread rises higher than usual. Only if you buy kvass, see the composition, so that there would be less of any chemistry, I mean sweeteners and substitutes.

Please tell me, how many grams do you have? And you don't need to brew the malt, as I understand it, so dry and pour it?

Yes, indeed, kozinak tastes excellent! I added about a quarter of a grated apple and a teaspoon of vinegar (I was afraid of crumbs), it seemed not in vain)) And also, when I put everything into the stove and she began to interfere, I began to actively help her, but nothing worked for the two of us, so , when all the ingredients were mixed together, I simply put aside about 450g from the oven. dough ... As a result, we got such a small, dense loaf.
The second part of the dough spent the night in the refrigerator, then I warmed it up for half an hour on the "yogurt" program and started it on the main one. I'm waiting for the result of these bullying.

Well, by tradition - a photoreader!

Homochka, the bread turned out pretty! Only next time add a little less water, the roof will be smoother and the moisture content of the crumb will decrease - it will be absolutely super!

Thank you very much for your feedback! Yes, I already understood about water, I just haven't quite learned to feel a bun made of different types of flour, this one was very sticky, closer to semi-liquid, but I was afraid to add flour, remembering about the large number of additives.
But it will not be possible to repeat this tasty treat soon, unfortunately ((

I have a question !!! The recipe says: "millet flour - 2 cups, rye flour - 1 cup, rice flour - 1 cup", and below: "flour mixture - 3 cups." 2 + 1 + 1 = 4 Where else has another gone?

And if you check the flour-liquid ratio, what happens? Author's slip or?

Recipe: 3 cups flour = ABOUT 430-450 grams of flour - 290-300 ml liquid. This corresponds approximately to the standard for flour-liquid laying!
This means that perhaps the author of the recipe simply made a mistake in counting cups - nothing terrible happened, we on the forum can on our own check the correct ratio of the number of ingredients bookmark, find errors and misprints https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=1625.0

Admin, nothing terrible happened, I just wanted to clarify Which cup (with which flour) is superfluous For one cup of wheat flour there is a lot of 1 tsp rye + 1 tsp. rice? Maybe rice and rye for half a cup?

We read carefully the recipe:
We make a flour mixture first ands:
Wheat flour 2 cups
Rye flour 1 cup
Rice flour 1 cup
Malt 4 tbsp l.
Mix everything well - this is a mixture for our bread.

And now Larisa takes from the resulting flour mixture from 4 glasses only 3 glasses - Flour mixture - 3 cups
That is why there is no censure and error - in fact, Larisa takes only 3 cups of flour mixture (about 430-450 grams) and liquid about 290 ml.
In fact, she also has the remainder of the flour mixture unused!

mmm, interesting approach
Tatyana, thanks for the clarification
