Lobio or canned green beans in tomatoes with carrots and peppers (no water, oil, and vinegar)

Ingredients

Tomatoes 1-1.2kg
Beans 1 kg
Young carrots 200-250gr
Sweet pepper (already peeled) 300gr
Coarse salt 1 tbsp. l. with a small slide

Cooking method

  • No water, oil or vinegar are used in preservation. In order to avoid fermentation, vegetables are not put onions and herbs.
  • Wash vegetables in advance and peel carrots and peppers. I wash the green beans in advance in a large container, rinse them under running water and transfer them to a colander to drain.
  • We start with tomatoes, cut them into large pieces, if the tomatoes are not large - into 4 parts, if the fine "cream" - into 2 parts, large tomatoes - into 8 parts. Cut out the stalks and white-green stems. It is very convenient to cut tomatoes with a special knife from Tramontana. Place the tomatoes in a 4-5 quart saucepan. Cover with a lid and put the saucepan on medium heat (power) to release the juice and boil.

  • Peel the carrots, it is better to take the young ones, they are very juicy and rub them on a medium grater. You can cut carrots and larger, that's how anyone likes. Pour into boiling tomatoes. Let it simmer and reduce heat (power) to low. Simmer further under the lid.

  • Cut the beans washed and dried in a colander with scissors into small pieces, in one piece - one bean. This is perhaps the longest and most boring process in this recipe. Of course, you can cut it into larger pieces, it just seems to me that this will fit more into the jar. Pour the chopped beans into a saucepan with stewed tomatoes and carrots. Bring to a boil again and leave to simmer under the lid over low heat (power).

  • While the vegetables are stewing, cut the peppers into small strips about 5mm thick. Again, the pepper can be cut into arbitrary, larger pieces. Put it in a saucepan, add 1 tbsp. l. salt and leave to boil under the lid.

  • While the vegetables are stewing until completely soft, wash the jars and lids, and sterilize them in the microwave. Here is a description of a method for sterilizing cans in a microwave How to sterilize empty jars in the microwave

  • Arrange the vegetables in cans, for the amount of vegetables indicated in the recipe, 2 720 ml cans and 2 450 ml cans under screw lids were needed. Put it tightly under the very lids, so it is better to put the filled jar in a plate, when I screwed on the lid, a little liquid poured out.

  • Turn the rolled jars over and put them upside down on the lids, wrap them up until morning.

  • You can simply store it in the kitchen. I keep it underground, but in the summer we have +20 there, and last year's pair of leftover cans feel great. Try to do this, it's not difficult at all. Cook and eat to your health!

The dish is designed for

2 cans of 720ml and 2 cans of 450ml

Time for preparing:

2 hours

Cooking program:

handles, knives, scissors, thick-walled pan

Note

In general, Lobio (from the Georgian ლობიო, [Lobio]) is a Georgian dish, as well as a common name for beans (both green, green beans, and beans). Lobio dish is popular among the Transcaucasian peoples, and is and from boiled red beans. This recipe, of course, is not an authentic lobio, so I do not attribute it to the national Georgian cuisine.
This is not the first year I have been doing beans.I developed this recipe myself by trial, there were no mistakes. If you want, you can first remove the skin from the tomatoes, nothing in the recipe will change from this, it just takes longer to prepare the tomatoes.
If you want a thinner substance, take 1.2 kg of a tomato, if, as mine is thicker, then 1 kg of tomato is quite enough for the indicated amount of other vegetables. It is better to use fleshy tomatoes, in stores they are usually plum tomatoes. I have tomatoes and all the other ingredients are my own.
I use this canned food in soups, a half liter jar just for a 4L pot of soup. Or you can make something like a salad, then add herbs, garlic and spices (cumin or coriander) to the vegetables and you will get almost Lobio. To your health!

Swetie
Luda, this is a very wonderful recipe Especially for the deprived ones, who have very little freezers)
But pick one grain at a time? Horror, horror. Maybe two at a time, eh? Or roughly shred? Or no way? Will it be lost?

Maybe two at a time, but
Swetie, but whatever you want and cut it, it’s me that would fit a little more, it seems to me that the smaller you cut, the more it will fit into the jar, but maybe I’m wrong. The weight ratio of tomatoes-beans-other vegetables is important here. How you cut it is a matter of taste

Mandraik Ludmila, Buttercup, Wonderful! It's that simple!
Thank you, I need this recipe!

Antonina, tomatoes are generally a gorgeous preservative, and I make lecho without anything. True, now I report zucchini for "meat" in lecho, it practically does not affect the taste This year we have a good harvest of tomatoes, so I will roll everything in tomatoes
Vladimirovna
Mandraik Ludmila, thanks for posting the recipe. Today I did it just to eat. The taste is awesome, though I changed a little, at first I slightly fried the carrots along with a small onion. The beans were Blue Hilda very meaty. Now she's just ripe, it's time to clean up. Tomorrow I'll make some cans for the winter.

Vladimirovna, great, I'm very glad. Just don’t put the onion on conservation, I cannot vouch for the safety of the lobio with the onion - I didn’t
And today I decided to roll up lecho, using this one instead of pure tomato filler

, otherwise I don't have as many tomatoes as I would like. Well, I also stuffed zucchini there for volume, blend everything, poured chopped peppers and after 20 minutes, I’ll just roll it up.But I’m doing this for the first time, and I’ll see how it will stand Although I think everything will be fine

This time, I didn't have carrots and peppers for the lobby, and I made beans with tomatoes and zucchini. Zucchini is approximately equal in weight to beans. Again, no water, oil, vinegar, only salt and garlic.
