Red Bean Soup - Lobio (Panasonic SR-TMH18)

Ingredients

Red beans 2.5 tbsp.
Bulb onions 2 pcs.
Vegetable oil 2 tbsp. l.
Garlic 2 cloves
Greens:
kinza 4-5 branches
celery 2-3 points
savory 2 twigs
mint 2 twigs
Hot chilli pepper taste
Salt taste
Water 2 l
Walnuts (optional) 100 g
Wine vinegar (natural) 1 tbsp. l.

Cooking method

  • A glass from a multicooker.
  • Beans - 2.5 cups soak in cold water for several hours.
  • Put a multicooker in a saucepan and let it boil for 5 minutes on the "steam" mode. Pour out the first water, so bean dishes are better absorbed.
  • Chop the onion finely and sauté in vegetable oil. Add beans and cover with water up to the 6. Put on the "simmering" mode. The braising time depends on the type of beans. On average, this is 2 hours.
  • Grind herbs, garlic with salt and red hot pepper in a mortar or blender. If you don't have fresh herbs, you can use dry ones.
  • As soon as the beans become soft, they need to be mashed, but not until mashed, it is good if individual beans are found. Add 0.5 cups of walnuts if desired. But even without them, it turns out delicious.
  • Put prepared herbs, boil on "steam" for another 10 minutes and turn off. You can leave it on heating for a while.
  • At this time, add a spoonful of natural wine vinegar.
  • Vinegar can be replaced with sour plum -tkemali or put a spoonful of ready-made tkemali.

Lobio is often prepared as a snack. But there is also lobio soup, a very tasty and satisfying first course. It goes especially well in winter: hot scalding with pita bread, pickles, pickled cheese (such as suluguni, vats, goat cheese). You can also cook it on the stove, preferably in a pot or in a cast iron.

I wrote the recipe for a multicooker, so I indicated such values. Until the 6th mark, this is approximately 1.2 liters (a little more is possible) The beans were measured with multicooker glasses.
If done in a saucepan of 2.5 liters, I put 2 full 250 g cups of beans. These figures are approximate, since water can be added during cooking. Someone likes it thicker, and someone loves it thinner. The main thing is to boil the beans so that you get a soup - puree, and do not float individual beans in water and fill them deliciously.
