Ingredients

Red beans 300 g
Peeled walnuts 100 g
Large onion 3 pcs.
Garlic (to taste) * 2-4 teeth
Cilantro 120 g
Hmeli-suneli 1h l.
Salt pepper taste
Vegetable oil for frying

Cooking method

  • Soak the beans in cold water for 4 hours. Then rinse, cover with new water and boil until soft. I boiled in the Shteba pressure cooker, Porridge mode 0.7 for 30 minutes. Drain the water, leaving a little broth.
  • Chop the onion and half the garlic and fry in vegetable oil until soft. At the end, add hops-suneli, mix.
  • * I used 1 + 1 clove garlic ... for my taste, and that's a lot.))
  • Add walnuts to the onion and chop with a blender until smooth.
  • Finely chop the cilantro leaves, grind in a mortar with the remaining garlic and salt, so that the juice stands out from the cilantro.
  • Mix the beans, onion and nut mixture and cilantro with the garlic. Add a few tablespoons of bean broth if necessary.
  • Cover with a lid and leave to infuse for 1 hour.

In principle, onions are not fried, but allowed to become transparent. You can add pomegranate seeds to the finished lobio. You can do everything the same, but almost like the first course, with a lot of broth. Most importantly, beans should not be cooked over high heat. Otherwise, it will brew and get unpleasant grains. You can mash some of the beans with a crush, whoever likes it. My mother-in-law put the crushed garlic in the prepared dish before turning off the heat. I do the same.
