As for cutting into cubes - this is not manti, after all, meat was always chopped in dumplings - in early times, with kitchen cuts in troughs or with knives on the table as small as possible. The cooking time for dumplings is short, what cubes are already there, it will not cook properly.

We mainly had baked goods, biscuits, cakes, dough, disgusting and raw peeled vegetables, carrot and beetroot cutlets, and so on, little things. Meat in our "hungry Volga region" happened only on the market and is very expensive. Yeast was also extremely deficient, so yeast dough was simply doomed to be popular, especially before the holidays.
And as tobacco-chickens are finally exclusively restaurant exotic. :-)
