Cooking method

  • All my life I did Easter traditionally - with dough, in large quantities. And then I decided to try Easter according to the classic recipe of my great-grandmother to bake in a bread maker. The recipe, frankly, is much more than 100 years old - it was passed on through the maternal line. The only difference is that 100 years ago there was sourdough, now purchased yeast. But only alive! Not dry.
  • I divided the proportions by 6. And lo and behold! Happened! True, the first 2 Easter \ "crawled \" out of the mold and sealed to the lid of the bread machine (first I took small forms, then divided it into only 4). But the indicated proportion fits well in a large form (the one that is 1 kg). And the taste is excellent, and the smell is just a miracle! And everything is much simpler.
  • So: we heat milk to a warm state (not hot!), Dissolve yeast and sugar in it. I do not recommend taking dry yeast - the taste is not at all the same and the dough is somehow fragile and tiny. And with natural yeast, everything is fine.
  • Next, just pour it into the mold, add all the ingredients except the flour. Pour in butter last - heat it up so that it melts, but watch it again so it's not hot.
  • Instead of ground cloves, you can grate the zest of 1/3-1 / 2 of an orange (to taste). Both options are very interesting. 1 / 2-1 teaspoon of dry ginger can be added to the zest.
  • I never put raisins - Easter turns out to be very rich, it's kind of superfluous there. But whoever loves - try it.
  • And on top of the last - flour.
  • I turn on the Basic mode, the loaf is 1000 (medium), the baking is strong.
  • I have a Gorenje BM1400E bread maker, but I think that any one that has a large mold with two blades will do, since a mold with one blade does not mix well such a dough.
  • Caloric content - 340 kcal per 100g.
  • It is possible without a bread maker - then multiply the proportion by 3 (per 1 kg of flour) or 6 (per 2 kg of flour). First, in milk, 1/4 sugar, yeast and a part of flour (to the consistency of pancakes), make a dough, when it comes up - add all the remaining ingredients and knead well. Lay out in forms 1 / 4-1 / 3 of the volume, put again to come up to 3/4 of the form and put in a preheated oven to bake until cooked at 200 degrees.

An interesting recipe, baked yesterday, in HP Panasonic, though on dry yeast for baking. It turns out so softly airy. Very tasty, added only vanilla sugar and zest - it was enough. The only thing, the crust is tanned, not burnt, but it turned out so fried. I will continue to bake and experiment! You can count on more flour.
