Kulich Pechersky (kneading in a bread maker)

Ingredients

Sugar 250-280 grams
egg yolks 8 pcs
butter 80 gram
Vegetable oil 20 grams
Milk (cream) 350 ml
Cognac (whiskey, vodka, rum, but better cognac)) 50 ml
Cinnamon taste
Vanilla taste
Yeast 1 sachet (saf moment)
Salt pinch
Flour about 800 grams (watch the batch - you may have to add a little)
Raisins taste

Cooking method

  • 20 years of my life have passed in the immediate vicinity of the Kiev-Pechersk Lavra, namely, I lived across the street from it. I got this recipe from a neighbor ... And very successfully turned up on my arm today. I also used it. I will not advertise and praise, I hope that the one who sings will write his reviews.
  • We put the ingredients in the bread maker, according to the instructions. We choose the kneading program - I put on "pizza" - 45 minutes of kneading, then again for 45 minutes. Watch the kneading - the flour is different, the yolks are different ... You may need to add flour. I add raisins during the second batch, after 15-20 minutes.
  • After the dough has been kneaded, I transfer it to baking tins for Easter, and let it stand in tins, in the oven preheated to 50 degrees or just in a warm place.
  • I bake until tender (it all depends on the oven) at about 180 degrees. In order not to burn the top, you can cover the Easter cakes in the oven with damp baking paper.
  • Lubricate the top with sugar-free protein, if you add sugar, there will be a sticky top. Sprinkle with sprinkles or decorate as you like.
  • PS Panasonic bread machine does an excellent job of kneading this amount of dough. There is enough yeast for the dough to rise.

If you want, you can use the dough kneading program - 2 hours 20 minutes. It's just that the kneading does not start immediately, the ingredients are heated first.

I did everything almost according to the recipe, it was too late when I made up my mind, and there were only 4 eggs, so I added the yolks right away, and whipped whites in the foam on a spoon during the second batch of "Pizza", in total there were 4 yolks and about 3-4 proteins - I don’t know for sure, they have remained in my common heap since the last time, about 10 pieces, I also added flour to my eyes, but I didn’t bring it to the kolobok, or almost kolobok, with a small skirt in the kitchen I made the temperature up to 30 degrees. left to come, for about an hour, the dome rose a lot, clearly enough for 3 forms of 500 grams each, baked at a low temperature, with water below

Just hands dropped. I tried to get used to the idea that in the morning I would have to start over, and until the morning I left everything "as it is", did not open the oven. The electricity only returned in the morning. I opened the oven, and my cakes survived. And they practically did not even settle. The domes have become a little less, and during "baking" the bottom has dried out a little, but the taste is delight. A real cake. Airy, sweet, aromatic. I myself still cannot believe that such a dough can turn out in such an extreme. Mom had to send the photo, she didn't believe.
