Mujadara (lean)

Ingredients

rice mix (wild black, unpolished, brown) 70 g
red lentils 80g.
canned corn 50 g
turnip onion large 1 PC.
garlic 2 tooth.
fresh tomato 200 BC
olive oil (vegetable) 2-3 st. l.
parsley, cilantro, green onions 1 bundle
ground coriander (I have smoked) 1 tsp
curry 1 tsp
salt taste
boiling water 1 l.

Cooking method

  • Mujadara (lean)Rinse the rice, pour 0.5 liters of boiling water and cook until cooked according to the instructions on the package.
  • Mujadara (lean)Rinse the lentils, pour the second half of boiling water, put on fire, boil for 5 minutes. Turn off, cover and leave for the time that rice is cooked.
  • Mujadara (lean)Dice the onion. Garlic, finely.
  • Mujadara (lean)Fry the onion until transparent in half the oil, add the garlic.
  • Mujadara (lean)Add corn, stir and fry over low heat for a couple of minutes.
  • Mujadara (lean)Put the rice and lentils in a colander. Allow water to drain.
  • Mujadara (lean)Pour into a skillet with onions and corn. Fry everything together for 5-7 minutes while stirring only 3 times.
  • Mujadara (lean)Season with salt and spices before the last stirring. Turn off.
  • Mujadara (lean)Cut the tomatoes crosswise, pour boiling water over for a couple of minutes, take out, dip in cold water and remove the skin.
  • Mujadara (lean)Cut into cubes.
  • Mujadara (lean)Chop the herbs, put in a chopper, pour in the remaining oil.

  • Mujadara (lean)Mix with tomatoes and salt.
  • Mujadara (lean)Put mujadara on a plate, put tomatoes in the center. We serve.

Rice is the only one who uses basmatti. I can tell you a lot depends on rice. She says there are a lot of varieties of rice, eyes run wide. But most importantly, the taste cannot be compared with what is sold here. You can just eat boiled rice without anything. When she comes here, she brings my mother rice (round, Egyptian) and mango. And from here to there they bring buckwheat and black bread.

First, I prepared juice from tomatoes, you can grind it through a sieve, I drove it through a screw juicer. The juice turned out not thick and not liquid, as with pulp. Salted it to your liking. I cut off the ends of the beans, boiled them in salted water, not to the point of softness, but so as not to crunch, I tried each portion, my beans were different and the cooking time was also different. But I tried to close it in jars of the same grade, cooled it, put it in a jar, added garlic, hot pepper, poured it with boiling juice and set it to sterilize. 15-20 minutes, banks were 0.5 and 0.650. I sterilize here by such the way Tanya (Admin) is very convenient for me.
