Ingredients

cucumbers (for a can of 3L) how much will fit in the jar

sugar 110-120gr (6st. L.)
essence (acid) acetic 70% 9-10ml (1 dessert l.)
currant leaf 10 pieces
black peppercorns 6-10pcs.
garlic 5 pieces.
tarragon (tarragon) twig (if any) 5-6cm
dill stick with umbrella
horseradish leaves (optional and better not to put raw)

Cooking method

  • Well, are you out of stocking cucumbers? So it's time for Chuche to upload the recipe))). This I mean that I'm always "on time"!)) Tea and tablespoons are taken with a hill. Not with a huge one, but with such a slope.
  • All dosages are calculated not for 3L of water / marinade, but for 3L JAR! That is, from how many cans you have poured water into the pan, here is the calculation for so many cans and count salt / sugar and everything else. If you take cans of smaller volume, divide in proportion to the capacity of the BANKS. For a 1.5 liter can - halve the recipe, for a 1 liter can - into three, etc.
  • Mother's cucumbers. Slightly sweetish, pickled. Wonderful. For my taste. On yours - you have to try, there is no other way)).
  • Everything is there as usual with cucumbers.
  • 1. Wash the cucumbers thoroughly and prepare them for canning (cut off the ends). Put in jars tightly together with herbs, pepper. It is better to divide the greens into 2 parts and part to the bottom, part to the middle / top.
  • 2. Pour boiling water over, let stand for 5 minutes - pour the contents into a saucepan. In fact, you pour boiling water over the cucumbers for "disinfection" and warm them up.
  • 3. Boil again, pour for 1 hour, covering with sterilized lids. The cucumbers begin to change color. From the usual cucumber green to herbaceous.
  • 4. Drain again into a saucepan, add salt, sugar, after boiling add essence, immediately pour the marinade into jars and roll up (cover the lids again with boiling water). Turn over and wrap overnight. All.
  • On horseradish leaves. They stimulate active fermentation, so it is best to dry them before tamping them into jars, but do not just put them raw like other greens. That is, for example, they plucked it in the evening, washed it and put it somewhere on the table. In the morning, you can work with cucumbers.
