Semi-finished eggplant

Ingredients

eggplant about 2 kg
salt 2 tbsp. l.
sugar 2 tbsp. l.
vinegar 9% 150 ml
spices to taste

Cooking method

  • Wash the eggplants, cut off the stalks, beat a little with a knife. Boil the eggplants in water, do not overcook (the head of the match should pierce the skin with effort).
  • We immediately transfer the hot eggplants to sterilized 3-liter jars. Straight to 3 liter. pour 150 ml of vinegar into the jar. Pour brine immediately: 700 ml of water - salt 2 tbsp. l., sugar 2 tbsp. l. Boil spices in brine - dill, laurel. sheet. Roll up, wrap up.
  • Optionally, you can put 2-3 peeled tomatoes in the jar.
  • Semi-finished eggplant
  • This amount of water just fits in a 3-liter jar, because the eggplants are quite dense.

Note

Such blanks were closed with my mother for a very long time, a recipe from the 80s. In winter, these eggplants can be used for salads and caviar. They are completely ready to eat, salad or caviar should be salted or acidified only after cooking.
They stand perfectly in the apartment, as long as I remember they never exploded.
But a photo of a 1.5 liter can can be made in any container in proportion.

You can season with mayonnaise of a delicate taste, since eggplant is already with salt and vinegar. You can fry the cubes in oil and add garlic. You can make caviar: skip through a meat grinder along with tomatoes from a jar or add fresh (or canned without vinegar), onions there (you can fried), season with fragrant oil and garlic. You can stew the same caviar in a frying pan ... Oh, you can't remember everything at once.

Fried a little onion, then separately stewed carrots, grated on a coarse grater, added finely chopped eggplants, onions, a little bitter pepper.When stewing, I added my summer tomatoes, rolled with bell pepper, seasoned with salt-sugar-vinegar to taste and fragrant bazaar sunflower oil. VERY VERY tasty !!!
