Marinka cake

Ingredients

For the test
eggs 110 g
carrot juice (freshly squeezed) 75 ml.
sugar 170 g
sour cream 170 g
wheat flour, higher. grade 220-250 gr.
baking powder 1 tsp
For cream
milk 80 ml.
egg 60 gr.
butter 200 gr.
roasted peanuts 100 g
sugar 170 g
For decoration
chocolate 30 gr.
peanut 30-50 gr.
Additionally
vegetable oil for mold lubrication
semolina for sprinkling the mold
Glaze (optional)
sour cream 3 tbsp. l.
sugar 2 tbsp. l.
cocoa 3 tsp
butter 1 tbsp. l.

Cooking method

  • First, prepare the dough. Squeeze juice from 2-3 orange carrots, add sour cream, eggs, sugar and flour with baking powder. The dough turns out to be fluid, but not liquid. Grease the baking dish with vegetable oil, sprinkle with semolina. Pour 1/3 of the dough into a mold and send it to an oven preheated to 180-200C for about 15-20 minutes, check the readiness with a toothpick. You can also bake with one cake (I do it), but then it is necessary to increase the time from 40 to 50 minutes. (depending on the characteristics of the oven). We remove the cakes from the mold while still hot, leave to cool
  • While the cakes are baking, let's turn to the cream. Mix the egg with sugar and milk, bring to a boil over low heat, stirring constantly. Leave to cool. Beat the butter, add the cooled sugar mixture in a tablespoon, beat until smooth, add the peanuts, leave in the refrigerator for 20 minutes.
  • If you wish, we cook the glaze. To do this, mix sugar with sour cream and cocoa, add butter, bring to a boil and leave to cool.
  • Assembly. We grease the cakes with cream (you do not need to soak, they are wet), pour glaze on top (not necessary), decorate with nuts or chocolate, you can do both. Let the cake stand for at least an hour and you can eat.
