Vinegar (take my apple cider) + water 1 tsp + 2 tsp

Cooking method

  • I have not seen this on the forum. And since I really love this salad, I decided to share it.
  • So everything is simple
  • Peel the eggplants, cut into cubes with a side of not more than 1 cm.Put them in heated oil in a frying pan and fry. It is not necessary to crust too much, but they should become soft. Then I turn off the heating, and leave them in the pan to rise and throw finely chopped garlic there. To warm it up and give a delicious aroma. I have an electric stove, it cools for a long time, so I still stir the eggplant and garlic for a while so that the underside does not fry. At this time, the smell in the kitchen !!!
  • Well, then everything is as usual: we cut all the listed ingredients into cubes of approximately the same size. We are not small. Although, whoever loves. I chop nuts with a knife. In a blender, you can also, if desired.
  • The eggplants are in this salad from the freezer, so I didn't fry them with garlic. Finely chopped the garlic along with the nuts.
  • Bulgarian pepper also from the freezer, leftovers. So if anyone has something to eat, try it !!
  • This time I didn't have a feta, so without it. Who does not like olives - without them. Or my son puts them off, I finish eating))
  • Greens can be put at will whatever you like.
  • As for vinegar, I made my own apple cider, it is not strong, so I dilute it by eye, in about the same proportions. If you take a store, then be careful. 1: 3 should definitely be diluted.

I fried eggplants as I needed. For rolls in slices, for diced salad. And then in sachets (one serving in one bag) and into the freezer. They take up little space, and in winter it's just beauty: the bag has thawed, and you can twist the rolls. Despite the fact that eggplants are 50 in autumn, and 500 in winter.
