Root vegetable salad

Ingredients

red onion 1 PC
pumpkin (either a small pumpkin or half a large)
carrot 1 PC
parsnip 1 PC
celery 1 PC
beet 1 large tuber
coconut oil or olive 1-2 tbsp. l
sea ​​salt
walnuts or almonds 2 tbsp. l
lemon juice 1 PC
apple cider vinegar 1h l
mustard 1h l
parsley handful

Cooking method

  • Cut all vegetables into cubes.
  • Preheat the oven to 210 degrees, pour oil over the vegetables and sprinkle with salt. Bake until soft, about 45 minutes. Roast the walnuts, then chop. Combine vinegar, lemon juice and mustard in a large bowl, add olive or linseed oil, pepper and salt. Stir in vegetables and nuts. Serve hot.

Note

If you don't have all the ingredients, it's okay, the salad will turn out great anyway. You can take any vegetables, we still have daikon in our salad.
