Liver pate from Natusichka

Ingredients

beef liver 1 kg
fresh lard (or lard) 200-300 gr (if lard - 1 glass)
beans 1 glass
bulb onions 300-400 gr
carrot 300-400 gr
butter 150 gr (for frying onions) + 150 gr (for greasing the roll)

Cooking method

  • Fry the onions separately in a skillet to drain. oil until browning
  • Boil 1 cup of beans separately.
  • In a cartoon, put in layers: lard diced (without skin), on top - liver cut into pieces, on top - carrots cut into cubes.
  • On the "baking" mode, slightly immerse the bacon (without stirring the layers), then switch to the "stewing" mode for 2 hours.

  • When everything is ready, cool, mix (everything that was in the cartoon + onion + beans) and twist everything in a meat grinder. Season with salt, pepper and blender with a blender foot. I got a somewhat watery mass, I think that because I was cooking in the cartoon and the juice that came out of the liver did not evaporate ... I could not drain the liquid, because in the cartoon there was melted lard along with the juice. I put the paste in the refrigerator to cool and slightly thicken. After about 40 minutes, the mass thickened somewhat.
  • Spread cling film on the table and spread half the mass in an even layer on it, spread softened butter on top (this is not necessary, as you like) and wrap it in a roll with cling film. From this number of products, I got 2 rolls 35 cm long each. Place the rolls in the refrigerator to secure the structure. I had rolls in the refrigerator overnight.
  • It turned out very tender, delicious! The rolls froze well!

The dish is designed for

2 rolls, 35 cm long each

Time for preparing:

2 hours - Cooking all products and about 20 minutes for making rolls.

Cooking program:

In a multicooker, about 10 minutes per program

Note

1. The girls recommended putting onions in the cartoon along with the liver and carrots, but I like lightly fried onions in the pate.

2. When I boiled beans, I changed the water 3 times to avoid the undesirable effect of flatulence)

3. Earlier (when there was no multi, according to my grandmother's recipe) I cooked everything separately: carrots, liver, and drowned lard and took pure lard (1 glass).
Then the paste mass turned out to be thicker and there was no need to cool it before forming the rolls. Although (in the case of cooking in a multitude), this in no way affected the taste!

4. A very good result is obtained when, after twisting in a meat grinder, "blender", then the mass becomes unusually tender!

And about the undesirable effect, here a pensioner neighbor shared: on the TV they said that it can be avoided from legumes if soaked by adding a teaspoon of soda. Then rinse and cook as usual. I haven't tried it, but I like the idea!

It is impossible to tear myself away from it: they ate for breakfast, then at 10-00 with morning tea (at work), then at lunchtime, then came home and, without waiting for dinner, I made myself 4 sandwiches with pâté and cream (dairy), then for dinner - only 2 pieces ate (I beat myself right on the hands so as not to grab it ...), barely stopped ... Thank God that today fast day - Friday, otherwise ...... at least 1 day I will take a break, and tomorrow ... I will eat again (if my husband and son leave).

And the last time I did it with lard, which I myself heated especially for the pate. So, if you take good lard (so that it smells good), then I am 100% sure that you will not feel it in any way! Trust me! I myself am like that, my husband says that I am "color", sometimes I eat, sometimes I do not eat, I am very selective in food, unfortunately. So I advise you to take fresh lard or make lard yourself in a frying pan (if you don't know how, I'll write) and you will be very satisfied!

I just did a little wrong - I immediately ran the pate in a blender, not through a meat grinder (there was just enough time). Next time I will twist it through a meat grinder.
