Stroganoff for the liver
Liver of beef, lamb, pork or veal 177 gr.
animal fat (rendered edible) 12 gr.
sour cream sauce with onions 100 g
tomato puree 10 gr.
Southern sauce 5 gr.
For sour cream sauce with onions
natural sour cream sauce 80 gr.
onion (peeled) 30 gr.
butter or margarine 3 gr.
Southern sauce 4 gr.
For natural sour cream sauce
butter 5 gr.
wheat flour 5 gr.
sour cream 100 g
salt pepper taste

Cooking method

  • For natural sour cream sauce lightly sauté flour without oil, cool, mix with butter, put in sour cream, brought to a boil, stir, add salt and pepper and cook for 3-5 minutes, filter and bring to a boil.
  • Sour cream sauce with onions
  • Chop the onion, sauté until tender, without changing the color, put the sour cream in the prepared sauce, add the Southern sauce (I take ordinary ketchup) and bring to a boil.
  • Preparation
  • We wash the liver, free it from large ducts, cut into cubes 3-4 cm long and weigh 5-7 g, sprinkle with salt and pepper, put in an even layer on a preheated pan with fat and fry with stirring for 3-4 minutes. Then fill with sour cream sauce with onions, add tomato puree, South sauce, stir and bring to a boil. We serve to the table, lay the side dish on the side (here I have violated the technology, I confess). You can cook without the “Yuzhny” sauce, respectively, increasing the tab of tomato puree.
