She made dough in a bowl (Panasik was busy). Dough ripened as usual for 3 hours in a warm place. Has risen as much as possible, but has not yet begun to settle.
Then she put a rye spatula, put the dough and everything else in Panasik, turned on the Rye program. When mixing, I slightly helped with a spatula. Everything was mixed up perfectly. I didn't interfere with anything else and this is what happened:

The crumb is quite decent, sometimes it turns out flatter in the oven, but this structure is often the case. The temperature inside the crumb at the end of baking is 94 degrees, i.e. everything is baked. I would, of course, lengthen the baking for another 10 minutes, but for the first time I decided not to touch anything.
The main thing is that for this recipe and for my sourdough, the automatic mode is good, hurray!
