Pies Envelopes with smoked fish

Ingredients

DOUGH:
Flour 250 g
Water 4-5 st. l.
Salt ½ tsp
Butter 125 g
FILLING:
Hot smoked fish fillet 200 g
Lemon juice 1 tsp
Fat sour cream 100 g
Dill ½ bundle
Black pepper
Yolk 1 PC.

Cooking method

  • Knead the dough in a bread maker in the "dough" mode. After the last kneading, turn off the oven (the dough does not need to be lifted). Place the gingerbread man in a plastic bag and refrigerate for 1 hour or more.
  • Divide the fish into pieces. Mix lemon juice with sour cream. Chop the dill and add 2/3 to the sour cream.
  • Roll out 12 rectangles from the dough. On each put fish, sour cream on top, pepper. Connect the opposite corners to each other to make an envelope. Place the pies on a baking sheet covered with parchment paper and put in an oven preheated to 200 * C for 25 minutes. After 15 - 20 minutes, grease the envelopes with yolk and sprinkle with dill.

Note

Nothing of the kind, no where and no one has tried. This yummy, in our family, is one of the most favorite dishes. I make these envelopes quite often, and they are eaten up catastrophically quickly. I used to make dough by hand, but with the advent of the bread maker, the cooking process was greatly facilitated.

I almost always make a double portion, as 12 envelopes run out very quickly. I use fish - mackerel. I buy it whole and take it apart into fillets myself
Once I did it not with fish filling, but with salted feta cheese, it also turned out delicious. In general, I recommend it to everyone and post a photo for a "surge" of appetite.

Have you ever tried it with slightly salted instead of hot smoking? Can such a replacement be made?

Today I took a chance - but HP did not disappoint, however, I put dumplings on the mode. I didn’t even expect it, I wouldn’t bother manually.
The filling is lightly salted salmon, also anointed with sour cream on top, and also made with mushrooms - oyster mushrooms.
Delicious!
