  • I have done it myself several times before. This recipe is perfect for people who love everything spicy.
  • Candied fruits are distinguished by the fact that they have a milder taste, thanks to three times soaking and subsequent boiling.
  • Although the sharpness is still present. Such candied fruits are eaten with pleasure by children like candy. I like to add them to biscotti.
  • So, I bought 1 kg of fresh ginger, scraped it with a knife. You can use a spoon, a metal washcloth, etc. The main thing is to remove the skin as thin as possible. Cut into slices or slices on a Berner grater in the middle position.
  • I sent completely crooked pieces to freeze.
  • I will tell you that peeling ginger is the most time consuming process in this recipe, then it only takes time.
  • Rinse and cover with water a couple of centimeters above the ginger. Leave for 7-8 hours. Then change the water to a new one. This soaking is carried out 3 times.
  • Candied ginger
  • It's been 3 days of soaking the ginger. Now we fill it with water and put it on fire. Cook for 20 minutes, drain the water, fill in a new one, let it boil, boil for another 20 minutes. We repeat the procedure a third time. The color of the ginger became darker, then it will lighten slightly during the cooking process.
  • We put the ginger on a sieve, let the water drain and weigh.
  • We take as much sugar by weight as ginger, and water for syrup (including lemon juice) - 2 times less than sugar.
  • For example, I have boiled ginger-680g, I take sugar 680g, water, taking into account lemon juice, 340ml.
  • Candied ginger
  • We cook syrup from water, juice and sugar, add ginger, lemon zest. After boiling, cook for 20 minutes. Then turn off and leave until evening.
  • We repeat this process 3 times (cook for 20 minutes, cool for 7-8 hours)
  • Well, the candied fruits are cooked, I threw them on a sieve, put them on the dryer and dried them at a temperature of 50-55 degrees. Some were rolled in sugar, some were left as they are.
  • They are pleasantly spicy, aromatic and very tasty.
  • Candied ginger
  • If you are not afraid of the amount of time spent, then go for it! Tasty, healthy and delicious.
