Lean pickle with mushrooms and olives

Ingredients

peeled potatoes 500 grams
big carrots 1 piece
turnip onion 1 piece
pearl barley 100g
any pickled mushrooms 200 grams
small pickled cucumber 3 pieces
vegetable oil 100g
olives with liquid 1 standard can
tomato paste 1 tbsp. the spoon
garlic 1 clove
marinade with mushrooms taste
salt taste
sugar 1 tbsp. the spoon
Bay leaf 1-2 pieces
any greens option
water or vegetable broth 1.8 liters

Cooking method

  • Rinse the pearl barley and soak overnight.
  • Dice the onion.
  • Cut the carrots into strips or grate.
  • Grate the cucumber on a coarse grater.
  • Slice the potatoes as you like.
  • Cut the mushrooms, if they are large, too.
  • I rubbed everything with a Berner grater.
  • Fry the onions and carrots in oil.
  • Add cucumbers and fry too.
  • Add tomato paste and sugar.
  • Mix everything and let the excess liquid evaporate.
  • Boil the pearl barley until tender.
  • Add potatoes, salt and also boil until tender.
  • Put the fry on.
  • Let it boil.
  • Add mushrooms, let it boil.
  • Pour the marinade with olives and, if necessary, with mushrooms.
  • Bring to the desired taste.
  • Add chopped garlic, bay leaves, herbs and olives.
  • Let it boil and turn off.
  • Cover with a lid, let it brew for about 30 minutes.
  • All. You can eat.
