Ingredients

Cream 11% 250 ml.
Gelatin 10 g
Curd mass approx. 20% fat (possible with fillers) 200 BC
Cottage cheese (0 - 2%, for filling) 550 BC
Flour (for biscuit) 3 tbsp. l.
Soda 0.25 tsp
Cocoa powder (for biscuit) 3 tbsp. l.
Sugar (for biscuit) 6 tbsp. l.
Sugar (for filling) 0.5 tbsp.
Egg (for biscuit) 4 things.
Fruit (canned, assorted, 425 ml can) 1 can
Dark chocolate (for decoration) 50 g

Cooking method

  • To prepare the dough, we divide the eggs into yolks and whites.
  • Add 1 tbsp to the yolks. l. sugar, beat.
  • Whisk the whites into a foam with the remaining sugar (5 tbsp. L.)
  • Put whipped yolks, cocoa powder, flour, soda into the protein mass (extinguish with vinegar or lemon juice), mix very quickly and gently with a mixer (at the slowest speed) only until the dough becomes homogeneous (about 30 sec.) ...
  • After adding flour, the biscuit dough cannot be stirred for a long time, otherwise it will not turn out light and airy.
  • Next, take a split cake mold, grease
  • vegetable oil and spread the dough. We put it in a preheated oven and bake at 180 * C. about 30 minutes.
  • The oven cannot be opened for the first 15-20 minutes.
  • We check the readiness of the biscuit with a wooden kebab skewer: stuck in the middle, it should come out dry.
  • Let the biscuit cool down and remove from the mold.
  • Then we cut it into two cakes, one should be thinner.
  • We put a thin crust on the bottom of the mold (if there is no detachable form, you can take the usual one, but it must be lined with cling film, leaving free edges so that you can then pull out the cake for them).
  • Cut the thicker cake into cubes
  • Let's start preparing the filling.
  • Cottage cheese, if it is with grains, I grind in a food processor with a knife along with sugar for a couple of minutes.
  • Pour gelatin with fruit syrup (half a glass is required), then cook according to the instructions.
  • The main rule is that the gelatin solution cannot be boiled.
  • Add a pack to the pounded sugar-curd mixture
  • curd mass, pour in the prepared gelatin
  • (directly warm) and cream, mix everything. Add fruit.
  • Finally, put the crust cubes in the filling, mix quickly.
  • Pour the filling into the mold, over the cake.
  • We put in the refrigerator overnight.
  • In the morning we take out the cake, fill it with icing.
  • Put half a bar of chocolate in a bowl,
  • add a few tablespoons of water and put on a small fire, stirring constantly. In twenty to thirty seconds, a homogeneous mass will turn out, pour it a little with a spoon onto the cake.
  • Then we put the cake in the refrigerator again to freeze the icing.
  • Before removing the mold, run a knife around the edges to separate the cake.
