Ingredients

Kefir, milk or water 250 ml.
Flour 250 - 300 gr.
Salt 1/2 tsp
Vegetable oil 1 tsp
Filling
Potatoes 1 kg
Onion 2 medium onions
Milk 100 g
Butter 100 g
Salt taste
Processed cheese 1
Garlic (optional) 1 - 2 cloves

Cooking method

  • I continue the theme of Tatar national cuisine and bring to your attention open pies with potatoes - kystyby.
  • Such pies have been made in Tatarstan from time immemorial. It is not difficult to make them, they are prepared from unleavened dough: in water, in milk or in kefir. This dish can also diversify the table during the fast.
  • The dough can be kneaded in a bread maker. In consistency, it turns out to be not very soft, but not cool either. Let it lie down a little under the cup and rest. Then divide the dough into pieces weighing 60 grams, roll out into flat cakes with a diameter of 20-22 cm. From this amount of dough, 9 + one of the scraps comes out, as a result, the output is 10 pies. If you want beautiful edges on the cakes, you can use any lid and curly cutter for the dough.

  • In a dry frying pan, fry the cakes on both sides, remove them, immediately fold them in half and put them under a kitchen towel so that they do not get windy and become soft. As soon as all the cakes are ready, we fill them with mashed potatoes, trying to evenly distribute the filling.
  • In mashed potatoes, I put onions fried in vegetable or ghee, if desired, add a clove grated through a grater - two garlic, processed cheese, and also pour in boiling milk. In general, any mashed potatoes you like and cook for yourself will do.
  • Melt the butter and grease each finished pie with melted butter on both sides.

Note

The pies are delicious the next day, they are heated in a pan, lightly fried on both sides, heated in a double boiler, and, of course, in the microwave.

In no case should the filling be liquid, ordinary puree, you can also thick, but not liquid. If the puree is very thick, it is difficult, but it can still be spread evenly on the cake.

I cooked yesterday. The family liked it. I added fried onions and homemade meat pâté to the mashed potatoes. But my husband liked the cakes themselves most of all. I did not water it with oil, because its quality leaves much to be desired. But I made a sauce of sansmen with kefir, herbs, salt and garlic. It was delicious. I will cook some more.

And pancakes, as it happens sometimes with me, there are many small bubbles, or two or three large ones, it depends on the kefir, if it is sour and the dough lies a little warm. I quickly, before they are fried, pierce them, release the air. If the dough is made with milk, there will be no large bubbles.

I think if you use it as a pita bread, it is better to roll it out thinly. You can wrap boiled or fried chicken pieces, finely chopped cabbage with greens, pour over with ketchup or other sauce, you get a real shawarma.

You are right, Lanochka, you can cook them lean, I wrote about this on the first page of the recipe. The taste of lean kystybyshek is very familiar to me. In the difficult times of perestroika, the salary was not given for more than six months. Then I had to cook so that the children did not suffer. Lenten kystybs are also very tasty and differ little from non-lenten ones. I smeared it with butter, on which I slightly allowed a little onion and carrots, the color of the oil turned orange and the pies shone with a bold beautiful shine.

At the very beginning, it was alarming that for 250 water - 300 grams of flour. Usually there is more flour when bread or pizza dough is made with a bread maker. I googled and found out that in a glass (250 ml) 160 grams of millet flour. I poured two glasses into a glass of water. After about 10 minutes I looked, the bread maker kneads the dough almost like for pancakes. I added another glass (third), I see the consistency seems to be normalizing. And the question is, maybe I'm measuring the wrong thing or no one in the bread maker made the dough for this recipe? If, as it were, "by eye" to do it with your hands, then you may not notice how much you poured. I'm not asking for some harm, but seriously. I added this recipe to the bookmarks and, so as not to make a mistake again (suddenly I forget), I ask you to explain or, if possible, if there is a typo in the topic header, then correct it. Sorry for the lack of understanding

Yesterday I kneaded the dough in KhP, kept it in the refrigerator overnight, in the morning I glued kystybychiks - very easy and delicious!
I made the dough on slightly bored kefir - it just worked out great!

Attic, did this dish more than once. The dough was kneaded with HP, the ingredients were added according to the recipe, liquid in ml, and the flour was weighed out on a kitchen scale. Honestly, I don’t remember whether I added flour or not, but if I did, it wasn’t drastically. The flour is different for everyone.

Everything is exactly according to the author's recipe - I measured it on the scales - I put the bucket of HP on the scales - I threw flour first, then kefir, then salt and a teaspoon of oil. In the process of mixing, I did not add anything; on the program "Pelmeni" everything quickly mixed up, I even turned it off for 10 minutes, took out the dough, put it into a bowl, covered it with a lid, and put it in the refrigerator.
