Frangipan pie with figs

Ingredients

DOUGH:
oil sl. 100 g
powdered sugar 50 g
egg 1 PC
flour 200 g
almond hammer. 40g
a pinch of salt
FRANJIPAN:
oil sl. 130 g
sugar 70 g
honey 70 g
egg 2 pcs
almond hammer. 150 g
semolina 1 tbsp. l. / 25 gr
figs 4 things
fragrant alcohol

Cooking method

  • Now we have the opportunity to enjoy not only dried honey figs, but also its fresh berries - and just like that, with a bite, and in various dishes.
  • Such a pie is one of the most successful, in my opinion, combinations of the fresh taste of figs and the full, buttery taste of nuts. The taste will be even more expressive if you add six kernels of bitter almonds to the frangipan stuff. I never miss this opportunity - the aroma is simply magical.
  • Cut the figs.
  • Pour aromatic alcohol in a deep bowl (dark rum, Old Cashin balsam, and GranMarnier liqueur will sound equally good).
  • Pour boiling water over the almonds for 5-10 minutes and peel them. Lightly dry-fry in a pan, but not too much: otherwise the color of the frangipan will be too dark, and the smell of roasted almonds will overpower the aroma of alcohol and figs. Grind the almonds finely, but not until they are oiled!
  • For the dough, combine softened butter and powdered sugar into a homogeneous mass.
  • Add an egg (room temperature), salt and stir until more or less homogeneous. Add almonds and flour, stir.
  • (In such pies, I like crumbly dough, which is not very different in taste from frangipan. Therefore, I add ground almonds to the dough).
  • Blind the dough into a lump and refrigerate for half an hour.
  • Roll out and place in a mold. Refrigerate for another half hour.
  • I always pre-bake the cake if the filling is supposed to be juicy (otherwise the dough seems to me wet and under-baked under the filling)
  • Oven at 180 C - 10 minutes under load (beans), remove the load and oven for another 10 minutes.
  • For frangipan, whisk butter, sugar and honey.
  • Add eggs, one at a time, beating.
  • Add semolina, stir.
  • Pour in almonds, pour in a spoonful of fig alcohol, stir.
  • Put the mixture on the dough, figs on top.
  • Bake at 180-200C for 40 minutes.

In my cookbook, this is the third recipe with fresh figs, two I have already shown you.
What can I say about this cake - delicious in texture and aroma!
And this is one of my husband's favorite pies, namely - with figs, although I also baked classic French versions - with plums and pears.
Frangipan with fruit is one of the most successful and famous combinations. And of course, in the distant Soviet times, such an amount of almonds for one pie was available again in those places where these almonds and figs grew - in the subtropics and further south ...
So this recipe in my notes is not so many years old: in 2007, a friend brought from a tour of Europe a brand new book by Jamie Oliver "My Italy" and we literally meditated on every page
True, Jamie's recipe has slightly changed over the years to suit our tastes and appetites. Hopefully, you will like our version too!

But this does not necessarily mean that you have to wait until the fall: I wrote that the classic for the French is frangipan with plums or pears. 6 plums can be found in stores, take them off - it turns out very well ... but with pears I liked it less, there all the taste was in frangipane, but the pear was lost ...

Irina, the pie is just a miracle! I don't like the figs that we sell in the market and in stores. I do not know why, maybe they are selling immature? But plum is really available. But I want to try cooking with frozen plums. This year there was a large harvest and a lot of frozen plums. I think first defrost, drain the liquid, and then into the pie.
