Schisandra chinensis

Schisandra chinensis

Ingredients

lemongrass berries on a twig 800 g
sugar 800-880 g

Cooking method

  • In South Korea, Schizandra berries are called omija - "five aromatic fruits", as the berry contains five flavors: sour, salty, sweet, spicy and bitter, and in traditional Korean medicine, each taste is associated with the human body and contributes to the maintenance of health. Also in this name "ja" is interpreted as "son", which indicates the direct benefits of this plant specifically for men. However, some contemporaries consider the name not very suitable, since a drink made from lemongrass berries as a tea for women has become widespread, supposedly the acidity of the berries is good for tightening the muscles of the face and getting rid of wrinkles. Korea is a country engaged in the cultivation, harvesting and active sales of lemongrass berries. Most of the Korean Schisandra is grown in the Mungyeong region, and some sources indicate its existence in the area since the time of the Li Dynasty. But even in Russia, the cultivation of schisandra chinensis is not particularly difficult, as is the harvesting of berries. Some options involve honey, I prefer using sugar.
  • Sort the berries, rinse thoroughly under running water, dry. Koreans leave berries on the branches, I separate the berries.
  • Separate a small part from the total amount of sugar; it will be required for the top layer. Gently mix the rest of the sugar with the berries. Pour the mass into sterilized jars about 80%, add some of the sugar left for the top layer on top. Close the jars with lids. Place the lemongrass jars in the refrigerator. That's all the work.
  • Gradually, the berries will give off juice and dissolve the sugar, combining into a syrup.
  • After about 2 weeks:
  • Schisandra chinensis.
  • At the end of the ripening of the syrup, it can be separated from the berries or left with the berries, at your discretion.
  • The syrup can be used to make cold drinks in the hot season by mixing with drinking water, this drink is an excellent thirst quencher, but hot tea can also be made. Some of my friends just eat a spoonful of cooked lemongrass in the morning with water or tea, considering this the best way to strengthen immunity and prevent colds in the autumn-winter time.
  • Schisandra chinensis
  • Hwachae or "fruit punch" is very popular in Korea. It is made from dried lemongrass berries by pouring cold drinking water over them and infusing, depending on the ambient temperature, for 8, 12 or 24 hours. Then they filter, mix the infusion with honey or sugar and serve, decorating with figurines, traditionally - in the form of a flower with five petals, cut from the pulp of a pear and sprinkled with pine nuts. Sometimes, the drink is served as a dessert, adding jelly, cut into small cubes.

Note

Important! Chinese schisandra has contraindications for use. There are also risks of allergic reactions and individual intolerance. Generally characterized as "tonic", lemongrass can cause high blood pressure in hypertensive patients.

SvetaI
Corsica, Ilona, thanks for this recipe! At my dacha lemongrass grew, there was always a bunch of berries on it, but I did not know what to do with them, I left everything to the birds. True, now because of the construction site, they cut everything down, but nothing, he will survive, but I will be ready and the berries will not be lost

Ilona, thanks for the recipe! I'm taking it to bookmarks. There is no Schisandra, but there is nostalgia (I was born and raised on Sakhalin) and the hope that I will get some dried one somewhere))).
I just loved to collect it in the forest, and the smell of the Far Eastern forest ...
Corsica
SvetaI, Tricia, good health and thanks for your attention to the recipe.

I left everything to the birds.
Svetlana, not every bird will eat lemongrass berries, prefer other berries. Yes, the plant is quite hardy, the main thing is that its root system is in order. Let it grow for your joy!

but there is nostalgia
Yes, it happens, I understand. Anastasia, do not be sad, if there is an opportunity - go, if not to someone - on a voucher, for example, eco-tourism.
Probably, dried lemongrass is on sale, but I did not look at the information, as there was no need.

Eh ... and where to get it, something especially fresh

Ilona, thank you for reminding Moscow that there are such berries
Corsica
TanyaThanks for your interest in the recipe!

for a reminder for Moscow that there are such berries
I wrote about lemongrass in response to a question Loksa, Oksana... Perhaps you also have this plant, they just use it as a decorative element in the country. Dried berries are no less useful for the body, if syrup is needed, then, as far as I remember, dry berries are poured with honey and insisted for a certain time. But I didn't cook like that, I can't recommend it. Alternatively, if you have experience of purchasing in foreign online stores, look there by the name Omija or Schisandra.

Ilona, thanks - I'll try to search the internet and maybe in pharmacies

I remember, at the dawn of my foggy youth, my pressure was steadily low. And I could not raise it with anything, with any eleutherococcus, etc. It is much easier to lower high blood pressure than to raise it. And our friends served in the army in the Far East.
So they specially sent me something sweet, or it was jam, or in the way, as Ilona wrote, processed. But delicious! Stunned! It was with this "jam" that I was saved then. After a while, the pressure returned to normal.
Now I have long been hypertensive, but I would have eaten a little lemongrass with pleasure even now.
Loksa
Lemongrass grows in my dacha, a decent one. There are not very many berries - I eat them like that or ice them, but I will gladly cook something sweet from it. This year it's too late to collect, I think it's sprinkled. I'll try next. By the way, 2 weeks ago, for some reason, he blossomed, apparently thought spring had returned. It has an unusual taste and I was treated to jam, but no one told how they cook it - I liked it. A very unusual taste. Beautiful climbing plant! And collect and cook it without twigs? Yeah, read it! The branches, where the berries are, are so ... tender. And I have low blood pressure, and the plant is also useful. I'm not allergic, but I do!
Ilonathanks for the recipe

Tanya, also, as an option, if you buy greens and other products from farmers and gardeners, ask them around, maybe someone has this plant on their farm or knows where it can be purchased.
Elena, thanks for the story !
Oksana , yes, that's right, the berries are collected in a brush, this is how the syrup is prepared in Korea, I prefer to separate the berries from the branches. Add sugar to the berries without regret, because if there is not enough sugar, the syrup can "play".
Gata
Lemongrass grows in our country house - but its berries are green and slightly elongated, like mini grapes, but with stripes like gooseberries. To try something next year according to your recipe ...
Tricia
Gata, Anya, according to the description you have actinidia. Also a liana, also a resident of the forests of the Far East, but the taste is completely different - actinidia is a relative of kiwi.
And ripe lemongrass is always a cluster of bright red berries on a long stalk.
Corsica
Gata, according to the description, actinidia is growing in your country house. Agree with Anastasia... This recipe is not suitable for making actinidia.

Girls, as I was told and repeated 100 years ago, my grandfather brought from the Far East and said that it was lemongrass, I thought so Now I will know, thanks
Corsica
Gata, Anya, your grandfather brought a good souvenir from the Far East. There are difficulties with the names, in common parlance actinidia is called "raisins", which for many means a variety of ordinary grapes.
