Cooking method

  • I rarely make yeast dough on whey, but today's failed fermented baked milk that turned into cottage cheese and whey gave me such an opportunity.

  • Due to the limited time, there was no time to start the dough in a sponge way, it was done without a pair and everything worked out. In other words, no matter how much I compared, I still did not understand the difference in taste depending on one or the other method, at least for ordinary pies.
  • I warmed up a glass of whey in the microwave, dissolved sugar, salt, butter in it. Thanks to the cold oil, the liquid reached the desired pleasant temperature for the hand, dissolved the pressed yeast in it, added an egg, spices, gradually mixed in flour, quickly kneaded the dough until smooth and sent it to ripening in a warm microwave. The consistency of the dough is very soft, it is better to fight with the desire to add more flour.
  • After 1 hour, the dough increased 3 times. Dust it with flour, kneaded and left for 15 minutes.
  • During the rise of the dough I prepared stuffing: poppy seeds, sugar and semolina mixed, poured cold milk, mixed well and warmed up in the microwave until thickened, stirring every 15-20 seconds.
  • In a separate bowl, poured boiling water over the raisins, left it for 15 minutes to swell. It also rinses out better afterwards. I washed the raisins, mixed them with the poppy filling and left to cool.
  • The dough became literally silky to the touch, very pleasant and tender. I rolled it into a rectangle about 1 cm thick
