Ingredients

wheat flour 160gr
potato starch 200 g
sugar 160 g
cottage cheese 300 g
margarine 230 g
egg 3 pcs
extinguish soda with vinegar 1 tsp
raisins 100 g

Cooking method

  • Mix wheat flour, potato starch, sugar, cottage cheese rubbed through a sieve, melt margarine a little in a microwave oven, so that it is soft but not hot, add raisins, an egg, quench soda with vinegar and knead the dough, it will turn out like a very thick sour cream
  • Cupcakes with cottage cheese use the second spoon to put the dough into the molds
  • Cupcakes with cottage cheese and bake in the oven at 200-220 degrees 35-40 minutes until they are browned

Today I really wanted something tasty, but I didn't really want to bake in the oven, it's hot. Not so long ago I bought a waffle iron and somehow I still haven't found a recipe that I liked. So I decided, what if I try to bake muffins in a waffle iron, I love this recipe. Only instead of cottage cheese I took soft mascarpone cheese 250g, I had it with cocoa (cottage cheese and margarine were not in the fridge), and instead of margarine butter 180g, I also added dry perfume (which I made for gingerbread) on the tip of the knife, everything else according to the recipe, raisins I didn't put it down, I forgot. Everything is as per the recipe, quickly stirred with a spoon, you don't need to stir with a mixer, a spoon is very good for this. And then she heated the waffle iron and laid out the dough with one tablespoon on each half. The result exceeded my expectations, delicate, fragrant, melting in the mouth waffles turned out. For the photo, I specially broke waffles to show that there is no hardening.
