Eggplant salad

Ingredients

Eggplant 5 pieces.
Salty water 1 tsp for 0.5 cups
Sunflower oil for frying by consumption
Bulb onions 5 pieces.
Carrot 5 pieces.
Bulgarian pepper 5 pieces.
Tomatoes 5 pieces.
Sugar 1.5 tbsp. l
Salt 0.75 tbsp. l
Garlic 1.5 heads
Acetic acid 0.5 tsp
Bitter red pepper, dzhusay, parsley, dill or any other greens (optional) taste

Cooking method

  • Cut the eggplants into large strips, pour over the salt solution, stir, drain the water.
  • Heat the oil, fry the eggplants, remove from the pan. Then prepare and fry all the vegetables separately!
  • Finely chop the onion, grate the carrots on a Korean grater, cut the pepper into half rings or whatever you like. Fry.
  • Free the tomatoes from the skin and stalks, cut into large pieces, put in a saucepan over medium heat. When they begin to boil, knead them with a crush, add all the fried vegetables, salt and sugar at once. Boil for 5 minutes, add garlic, herbs, vinegar, let it boil and roll up.

It is especially tasty cold with some hot side dish" - that's how she described it. I added bitter pepper, dzhusai, dill and parsley to the delicious, the most delicious.

The author in no way advises to just boil everything together - it turns out, as she put it, "a mess with a completely incomprehensible" faded "taste.

I was afraid that it would turn out too greasy, I do not like butter, but it turned out not too much. Each next portion of fried vegetables was removed from the pan with a slotted spoon, and even tilted the pan. It took very little oil, 75 grams or less.

I will certainly prepare such a salad, but next time I will halve the carrots (I'm not too much of it either ...)
