Eggplant caviar from granny

Ingredients

Eggplant 3,5kg
Tomato juice (purchased) 1 l.
Sweet bell pepper 1 kg
Carrot 1 kg
Hot peppers 3-4 pcs. kg
Onion 1 kg.
Salt taste

Cooking method

  • Boil the eggplants in salted water until very soft. Cool slightly and peel. Chop them with a hatchet until smooth.
  • Dice the onion and pepper. Grate carrots on a coarse grater. Fry the vegetables separately in vegetable oil.
  • Put the eggplants in a hot frying pan with oil and fry them. Then add all other vegetables, tomato juice and finely chopped hot peppers to the eggplant, salt, pepper and mix. Simmer over low heat for 20 minutes.
  • Spread caviar in sterile jars and sterilize 0.5 l - 15 min, 1 l. - 30 minutes.

The caviar is really tasty, but I don't boil the eggplants and don't remove the skin. I just cut it into small cubes and carcass for 40-50 minutes. And at the end I add 1 tsp. vinegar and then no longer sterilize in jars.
