  • In a bowl, mix the sourdough, liquid yeast and flakes (you can use multigrain or oatmeal). Cover with plastic wrap and leave warm for 2.5-3 hours.
  • The dough will not increase much, since it is liquid. When a lot of bubbles appear in it, then it is ready.

Nice loaf turned out !!!!! and on what did you grow liquid yeast?

Loksa, Oksana,Thank you!
The railway was made on cucumbers. The smell and taste of the raw material is well felt in this bread. The result is bread with the flavor of pickled cucumber
kuznez84
I baked it today with oatmeal.

I apologize for the evening photos. The kids don't give me much to do, and I'm not very much a photographer. Hope you can see that the bread is soft and fluffy.
Doriana
kuznez84, very cool bread, did not know that there is yeast on cucumbers
What was the recipe for making the railway?
kuznez84
Doriana, Thank you.
Railroad cars are all made according to the same recipe https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=417918.0 only the raw materials are used differently. Here I used cucumbers, and you can use any fruits, vegetables and even tea. If you already have a railway, you can convert them to cucumber
Doriana
kuznez84, yes I messed up something there, in the end I threw it away. And how is it translated? pour a half and add cucumbers?
I remember, yes, there was tea in that Temka, somehow I did not think about it. I know that yeast lives on fruits and berries.
kuznez84
Pour 50-100 ml of the previous railway, add pieces of cucumber, water and sugar. Let it ferment. I haven't tasted tea. Very good, active railways I got on grapes and plums.
Doriana
kuznez84, well, on grapes - a classic of the genre, but where to get it, grapes that are not scary to soak unwashed in yeast
Doriana
And in this recipe, 300 ml is a Pre-Enzyme? doubled yeast with flour? and in what proportion (otherwise there are already three options in the recipe)
kuznez84
Doriana, In this recipe, 300 ml is the railway itself without flour. But the starter culture can be replaced with a Preenzyme. The proportions of flour and iron are 1: 1. And the grapes can be washed, left on the table for a couple of days, so that yeast settle on it and make railway. I also soap cucumbers
kuznez84
Doriana, but in general, you yourself write that yeast produces alcohol! So all the bad bacteria will die. Don `t doubt

Well, this is because the recipe also contains sourdough, without it it would have been impossible to just pour the railway :)?

This is meant to dilute and wait until it fits in half?

This is the idea I like!

I am afraid that the alcohol produced may not be enough to "catch" all the bacteria

Here is 300 ml of liquid water to speed up the process and taste. Theoretically, it would be possible to just pour the railway, only I suspect that the dough would fit for a very long time.

Yes exactly
