Vegetable oil for frying 3 tbsp

Cooking method

  • I really like these eggplants, but I don't cook them very often. There are two reasons: eggplants must be pre-cooked and after filling they must be put under oppression ....
  • Using a double boiler, a homecooker and a vacuum sealer in this recipe, I made myself a party. Everything turned out very quickly, without dragging eggplants out of the water and without the frustration that a saucepan with oppression takes up the entire shelf in the refrigerator.
  • So I had:

  • Be careful with hot peppers: I have it small, but sooooo hot. She cleaned and cut him with rubber gloves. If you do not like spice, then it is better to do without it.
  • I washed the eggplants, cut off the stem and put them in a double boiler. I put it for 30 minutes, but it is possible and 20. While they were cooking, in Homecooker I fried onions and carrots until they are translucent, salted with three teaspoons of salt. Onions were cut on a 1.2 mm slicer attachment, carrots on "julienne".

  • I added greens to the filling. I passed the garlic (for greasing the eggplants) through the garlic press. I cooled the cooked eggplants in a double boiler basket to room temperature, placed them on a cutting board and cut them lengthwise without cutting through. Sprinkled the insides of each eggplant with 0.5 tsp of salt and spread a little garlic. I filled the eggplants, placed them neatly in the bag of the vacuum sealer (bending the edge of the bag so as not to get dirty) and sealed the "wet foods" on the program, interrupting the program when the juice began to rise to the seam.
