Black Pearl Salad

Ingredients

bulb onions 1 PC
black currant 2/3 cup
olive oil 2-3 tsp
crystals of sea salt pinch
rum (gin) 1/2 tsp

Cooking method

  • Cut the onion into thin semicircles and, trying not to crumble, beautifully lay out on a platter.
  • Using a spray bottle, sprinkle it with clean water and put it in the freezer. After half an hour we take it out (by this time the water will freeze) and spray it again. Put it in the freezer again. The water should cover the onion completely. If necessary, repeat the maneuver again.

  • When everything is frozen properly, we take out the dish from the freezer and leave it to defrost. In order not to disturb the beauty, we cover our dish with a second one of the same, and, pressing them together, drain the resulting liquid and dry the edges of the dish.

  • In the meantime, wash and dry the currants, pour half of the oil over it, mix gently. Our goal is not to crush a single berry, otherwise the appearance will go smack.
  • Sprinkle the onion with the rest of the oil, sprinkle it with salt crystals, put the currants on it.
  • We draw alcohol into a medical syringe with a thin needle and a trickle, draw a circle around the edge of the dish.
  • All! Serve on the table.
  • Already on the table you can mix.

The combination is interesting. Both the taste and the aroma.
You can add a drop of honey to the part of the oil that we mix with the berry.
After freezing, the onion becomes soft, transparent, but does not lose elasticity. But it loses most of the pungency and acquires a small sweet note. Its aroma magically changes - it shifts from onion to meat ...
Yes Yes! And add the rum vapors too!

It was conceived to make with gin, but the gin did not happen, I had to drip with dark rum.


It is the crystals that need salt. They look good on salad. I failed to photograph them properly.
