Ingredients

Shrimp chips 8 pcs.
For the guacamole sauce:
Avocado 1 PC.
Lemon juice 1 tsp
Garlic 2 prongs
Chilli taste
Ground black pepper and salt taste
Sun-dried tomatoes (can be fresh without seeds and skin) 4-6 pcs.
Cilantro 3 twigs
Kumin optional
Olive oil 1 tbsp. l.
Boiled shrimp or crab meat, if any

Cooking method

  • I offer a great option for a snack with a cold beer.
  • For many years I have been making shrimp chips and serving them with different toppings. In principle, any dip suits them, well, maybe, with the exception of fruit ones. Nowadays, getting shrimp chips is not a problem - they can be purchased in oriental stores or online. Earlier, when I brought them from Southeast Asia to my homeland, they seemed like an utter exotic delicacy. Now they are served in almost all oriental restaurants and replace bread.
  • In a Vietnamese family familiar, they were served in a mass similar to turkey by-product pate. And this was done only for the sake of distinguished guests. The very small skinny turkey was served for 17 people - family members and two guests. That was the kind of poverty that reigned there!
  • For good results, shrimp chips need to be cooked properly.

  • Preparation
  • - First, fry the shrimp chips. To do this, heat the vegetable oil for frying in a small saucepan. We determine the temperature empirically. If a shrimp cake dipped in oil falls to the bottom and lies dead, then the temperature of the oil is insufficient. If the cake begins to swell and open during the first seconds, and at the same time immediately becomes yellow and then brown, then the oil temperature is too high. Ideally, the cake first falls to the bottom, then floats up in the process of its transformation - it begins to increase in volume several times, becomes airy and porous, but at the same time retains its white color. That is, as soon as the cake has increased in volume, acquired a slightly concave shape and fully opened, it must be immersed in oil for a couple of seconds, and then immediately pulled out and put on a paper towel. Thus, you can bake the cakes in advance, then start preparing the filler.
  • You can see in the photo that the temperature is already too high, so you need to put the stewpan off the stove and wait until the oil has cooled down a little.

  • You need to wait a minute and, without putting it on the fire again, put the next cake. If it cooked perfectly, as in the photo below, then return the stewpan to the stove, set the temperature by 2-3 divisions and continue to fry.

  • We get airy, neutral in taste and the lightest in weight shrimp cakes or chips.

  • - For this dish, I do not grind the ingredients for guacamole sauce in a blender, I just knead the avocado with a fork. The rest of the ingredients are very finely chopped and mixed with the avocado, thus a thick dip is obtained, which does not spread and is not absorbed into the cake immediately.
  • - Guacamole sauce needs to be adjusted to your taste, because someone likes it sharper, someone loves it more gently, so I give the ingredients approximate.
  • Serving such snacks on absolutely flat plates made of natural slate looks very interesting.
  • If you have crab meat, crab sticks or boiled shrimps, you can put them on top or cut into pieces and stir in the dip.

I added oil to cool it and the next chipsina I already had a uniform brown color, but voluminous (at least three millimeters thick) and airy crispy.
On the third try, I didn't spoil a single piece. Honestly - 8 pieces for two to a bottle of beer - a great portion
I made the sauce as planned - I chopped bell pepper, tomato and a couple of garlic cloves in a food processor to small pieces, added tabasco for spiciness. A son-in-law with a friend just came and also checked out the dish. When spreading the sauce, the chips crunched interestingly, their salty taste went well with garlic
