Ingredients

For the apricot layer:
Peeled apricots 200 gr.
Gelatin 1 tsp with a slide
Water 50 gr.
Powdered sugar 2-4 tsp with a slide
Lemon juice 1 tsp
For the creamy layer:
Gelatin 1 tsp without slide
Milk 30 gr.
Vegetable cream-cream 26% + rum 100 gr. + 1 tsp.
For the berry layer:
Gelatin ½ tsp.
Water 30 gr.
Strawberry puree 70 gr.
Powdered sugar 2 tsp
Fresh cherry pitted 10 pieces.
For decoration:
Lemon zest
Mint sauce 3-4 tbsp. l.

Cooking method

  • At first glance, a rather simple dish - cream in the middle and fruit. But take a closer look at the form - it is not so easy to prepare such a form, believe me.
  • Place the dessert dish in the freezer. I use plastic ricotta jars instead of a mold.
  • Soak gelatin in water for 20-30 minutes.
  • Apricots are given pitted peeled. Using an immersion blender, homogenize them very carefully with the addition of lemon juice and powdered sugar. Powdered sugar is taken depending on the sweetness of the apricots.
  • Dissolve the gelatin in a water bath and mix it with the apricot puree.
  • In a very cold dessert dish, place half of the apricot puree mixed with gelatin on the bottom. Place in the freezer for 20-30 minutes.
  • Then, gradually rotating, grease all walls of the mashed potatoes. Lubricated one part - in the freezer. Freezes within 5-10 minutes. This can be done with a brush. I did it with a regular teaspoon. The process took quite a long time. I want to say that it is not easy. It is necessary to achieve an even layer. The higher to the side of the form, the faster it solidifies.

  • When the mold is completely covered with a layer of apricots, we begin to prepare the cream.
  • Let's prepare the second portion of gelatin, just like the first. We will only soak gelatin in milk. Then, already dissolved in a water bath, add to lightly whipped cream and rum. If there are none, replace them with cream with a fat content of at least 23%, mixed 50/50 with powdered sugar with the addition of vanillin. Fill the apricot mold with cream, leaving room for the berry part. Chill in the freezer.

  • Place cherries (any kind) in the freezer for cooling.
  • While the bavarois hardens, prepare the berry layer. Dilute the gelatin in water, and then dissolve it in a water bath. Mash strawberries with powdered sugar with a blender or fork. Let's add gelatin. Stir thoroughly. Let's add frozen berries.
  • Remove the bavarois mold from the refrigerator. Fill with berry mass to the very top on a layer of cream and smooth with a knife. Put in the freezer until completely cooled.

  • To serve, turn the mold onto a dish, put a hot towel on top. After 2-3 minutes. remove the form. Or immerse it carefully "shoulder-length" in hot water for a few seconds.

An unusually tasty and beautiful dessert. One drawback - goraazdo is eaten faster than it is done.
In culinary books "bavarois" - or Bavarian cream - always stands apart, it is not referred to as mousses, soufflés, or even jellies, and even more so to cold desserts. And when you read the recipe of any bavarois, the preparation seems quite troublesome: cook, dilute, whisk, mix ... But everything is not so terrible, unless, of course, you do not complicate your task with form and design!
