Cooking method

  • Dough for this pie in our family is called Tatar, because on it my mother baked Tatar belyashi, the recipe for which she brought from Turkmenistan.
  • The proportions of the dough are unchanged, as much as butter, so much kefir.
  • It is better to take soft butter, and mix with kefir, and then everything is dry, but you can first melt the butter, as I did this time, since it was from the freezer.
  • I always pour flour on the eye, the dough should be elastic. In his case, the rule works: it is better not to report the flour than to shift it.
  • I knead Bosch mum 5, 7 minutes, then immediately in the cold.
  • Filling: fry onions, carrots, to them cabbage, dried basil and salt, and put to simmer. Don't add black pepper, cabbage doesn't like it. I stewed in Shteba, on vegetables, for 9 minutes, it could have been less.
  • While stewing, boil 3 eggs, peel the fish from bones and skins, cut into pieces.
  • When the cabbage has cooled, add diced eggs and fish to it. At the end, pour in a little milk. Look at the juiciness of the cabbage. Milk makes the filling very tender and soft. Although it is a little, but it gives an effect. This "secret" ingredient for cabbage fillings was taught by my grandmother, and since then I have been cooking.
  • Well now collecting the cake... Divide the dough, roll out half, put the filling and cover with the second part, leave a hole in the middle.
  • I baked in Princess, 20 off cold, then stood closed.
  • P.S. This test makes wonderful portioned patties. One thing: never add eggs to it, you get rubber. Once I decided to experiment, I didn’t like the result categorically!

Look, there is a very successful recipe here. And it seems to me that if done on vegetable, then its amount should be reduced. By the way, in order to at least slightly reduce the harm, I use 1% kefir.
