Monastic cabbage soup with fresh cabbage and mushrooms

Ingredients

Fresh cabbage 1 kg.
Fresh mushrooms 400-500 gr.
Bulb onions 2-3 medium onions
Water 2.5-3 liters
Salt, pepper, bay leaf taste
Parsley, fresh dill (not added) taste
Potatoes (optional) 3-4 medium tubers
Sour cream (optional) to serve

Cooking method

  • Pour water into a large saucepan (I have 5 liters), salt and bring to a boil. Add chopped mushrooms, cook over low heat for 10 minutes, removing the foam. Finely chop the cabbage, chop the potatoes (if you add) into cubes. Finely chop the onion, fry in vegetable oil until golden brown. Add potatoes to the mushrooms, cook until half cooked. Then add the cabbage. Add the fried onions about five minutes before they are ready. Cook over low heat until vegetables are tender. Turn off the fire, add pepper and bay leaf, let it brew under the lid. Serve with sour cream.
