Butter 200 g
Sugar 170 g
Vanilla sugar 1 sachet
Filmless yolks (outer shell) 2 pcs. - 30 g
Milk 125 g
Cognac 1 tbsp. l.
Spinach juice 1 tsp
Pink liqueur or thick jam syrup 1 tsp
Cocoa powder 1 tsp
Decoration:
Candied watermelon peels several pieces.
Fried biscuit crumbs (made from biscuit scraps)
Cocoa powder 1 tsp

Cooking method

  • 3 cornets with attachments and 1 rectangular cake pan 10 * 20 cm, grease and sprinkle with flour.
  • Preheat oven to 200aboutFROM.
  • This cake, as the author of the book "Baking according to GOST ..." writes, was originally conceived in the form of a log. It was produced in two main versions - in the form of a decorated roll and in the form of an oblong cake. In the form of a roll we have recipe... There is a completely different performance and the writing is very different from this.
  • And so, we bake!
  • Biscuit:
  • 1. Beat the yolks with 2/3 of the sugar until a light, thick mixture is obtained.
  • Sugar yolks:

  • 2. Whisk whites until peaks, add sugar and beat until firm and shiny (about a minute). It is not worth whipping the whites too much (as for meringue), the biscuit may rise poorly.

  • 4. Add the sifted flour and stir gently, but thoroughly and quite vigorously. Conveniently stir from the edge of the bowl, lowering the dough into the middle while turning the bowl.

  • 6. Bake for 25 minutes at 200aboutC. Readiness is determined with a wooden stick - no raw dough should remain on it, or by pressing - the surface should spring. In exactly 25 minutes, the biscuit was ready.

  • 7. Cool the finished biscuit in the mold for 5 minutes, then turn over onto the wire rack.

  • 8. Leave to seal the structure for 12 hours. I baked in the evening, left it on the wire rack overnight, turned it over in the morning and put it in a plastic bag so as not to dry out, because I planned to collect the cake in the evening.
  • 9. Place the seasoned biscuit with the wider side on the board and cut off the top corners, giving a semicircular shape. Cut the biscuit into 3 layers.

  • 10. The resulting trimmings, if possible, grate, I just crumbled it with my hands, put on a baking sheet and fry for 10-15 minutes at 200aboutFrom to brown. It was easier for me to put it in the airfryer for 12 minutes at the maximum temperature. I opened it periodically, controlled the degree of drying and additionally grinded large pieces of dried biscuit into crumbs. Cool and mix with a teaspoon of cocoa powder.
  • 11. Prepare the impregnation syrup: pour boiling water over the sugar, stir until completely dissolved (I boiled it) and add cognac. Cool it down.

Prepare the syrup, for which mix the yolks with milk, sugar and vanilla sugar, strain (I did not filter, I stirred it all the time with a whisk, there were no lumps), bring to a boil over low heat and cook for a few minutes until thickened. Cool the syrup. Beat the softened butter until it becomes almost white, add a little syrup, and then brandy, whisking thoroughly each time. Divide the cream in half. Add cocoa to one half and whisk well. Set aside two heaping tablespoons of white cream, tint one part pink with jam, the other green with spinach juice.I used dyes. A little bit of green and orange dye (at the very tip of a narrow knife) she diluted with brandy (about 0.3 tsp) and mixed with cream.

  • 13. Soak all layers of biscuit with syrup, coat the bottom two with white cream. Coat the whole cake with chocolate cream and sprinkle, except the top, with fried sponge crumbs with cocoa.

  • a) put the green cream in a cornet with a leaf attachment,
  • b) in a cornet with a toothed attachment - pink,
  • c) into a flat-toothed cornet - the remaining chocolate cream.
  • Make strips on the surface of the cake with chocolate cream, leaving no gap between them. On the resulting corrugated surface, plant flowers and leaves of multi-colored cream. Decorate the cake with candied fruit and refrigerate. In the original, candied fruits should be made from watermelon crusts, I used those that were - pineapple, mango.

I know that the attitude towards him is ambiguous, for some he is nice, some maliciously call him soviet. For me, he is associated with childhood, so I don't see anything wrong with him. Simple in execution, good for novice pastry chefs, because the recipe is a win-win, everyone can repeat it!
