Malaysian Rotiboy Coffee Buns

Ingredients

Dough:
premium wheat flour 500 g
dry fast-acting yeast 8 g
granulated sugar 80 g
salt 1 tsp
butter 60 g
warm milk 250 ml
egg 1 PC
Filling:
butter 100g
salt 1/3 tsp
granulated sugar 1 tbsp. l
Coating:
butter 150 g
powdered sugar 150 g
egg (large) 1 PC
wheat flour 150 g
instant coffee 2 tbsp. l
boiling water 2 tbsp. l

Cooking method

  • Are you still losing weight? Then we go to you!
  • These rolls are a real bomb, it is simply impossible to resist! Crispy, sweet thin crust and the most delicate crumb. As Omelchik says: "Cooking for everyone!"
  • Dough for buns, I kneaded in a bread maker. For this, all ingredients, except for butter and 2 tbsp. l of flour, were sent to the bucket of a bread machine (the buns are quite sweet, so it is better to regulate the amount of sugar to your liking). Further - the "dumplings" mode (you can also "pizza"). After 10 minutes, we stop the batch, add the softened butter and the remaining 2 tbsp. l flour. We turn on the batch again.
  • We leave the dough to rise for an hour and a half in a quiet, secluded place (left in the bread maker).
  • Filling:
  • We mix butter, salt and sugar. We put it in the refrigerator.
  • Coating:
  • Mix softened butter with powdered sugar, add an egg, then flour.
  • Dilute instant coffee in hot water (or brew very strong coffee) and, if desired, mix with coffee liqueur or coffee essence (not added). We put the cream in a cellophane (or pastry) bag and put it in the refrigerator.
  • We spread the dough on a table slightly dusty with flour, divide into 16 equal parts. I cooked half a serving, so I ended up with 8.
  • From pieces of dough we make small cakes, on which we spread pieces of chilled butter.

  • Now the edge of each cake needs to be collected and carefully molded so that the oil does not leak out during baking. We form round buns and put them on a baking sheet covered with baking paper, seam down (I put them in a 26 cm split baking dish, my eaters like to break off the buns).

  • Cut off a small corner on the bag of cream and put the cream on the buns.

  • We put in an oven preheated to 230 degrees (convection -210 degrees). Immediately lower the temperature to 200 (with convection - 180) degrees and bake until cooked for 15-20 minutes. The baking time depends on your oven.

The dough is excellent, I sculpted them with filling and made them round, like pinched khinkali, and then turned them over on a sheet. It seems to me that it was not necessary to distribute them on two sheets, but to "plant" one more tightly, then they will have nowhere to "float". And also the feeling that because of the top cream they were flattened, because it was heavy when it was cold, and the dough was tender and airy.
