Dessert Food of the Gods with Goetterspeise Blackcurrant Jelly

Ingredients

Grated non-acidic black bread 200 g
Cocoa powder 2 tbsp. l.
Sugar 2 tbsp. l.
Cognac (I have rum) 4-6 st. l.
Blackcurrant jelly 150 g
Rum in jelly (I have blackcurrant liqueur) 1 tbsp. l.
Cream 100 g (50 g)
Vanilla sugar 1 pack
Lemon zest 1 tsp
German gingerbread (my addition) 1 small

Cooking method

  • The recipe is taken from a book on German gastronomy.
  • I really liked this variety of the so-called "Food of the Gods" because you can make jelly in the evening. Or in general, take the well-known currant jelly, which we harvest in quantities that are not always fully used for the next berry picking season.
  • Of course, it is less sweet and much more interesting from cooked jelly. I'll tell you how I did it, since the recipe simply indicated blackcurrant jelly.
  • Preparation
  • We mix in arbitrary quantities black currant jam, black currant liqueur or syrup and rum (cognac). Heat to a boil, boil for 3 minutes, filter if there are berries. Prepare jelly from the resulting syrup according to the instructions on the gelatin pack. The solution should be very rich and bright in taste. We put the jelly in the cold until it solidifies.

  • We rub stale black non-sour bread into crumbs, mix with cocoa powder, sugar and fill with rum or cognac. (Or another liquor to taste). Let it soak for at least 30 minutes. Can be left overnight, covered tightly with foil. And then serve in front of guests.
  • Beat the cream with vanilla sugar (in a pinch, use ready-made cream from a can) and add the zest.
  • We spread a couple of tablespoons of bread crumbs on the bottom of the bowl, a layer of cream on top, then a thick layer of jelly cut into cubes, cream again on top of the jelly and decorate, depending on the season, with frozen or fresh currants.

  • Delicious! A great quick recipe for Valentine's Day or a romantic dinner. Alcohol can be substituted for concentrated syrup.

Note

Since I did not have German bread, I added one spicy German gingerbread to the black Borodino bread.

Once, at a master class, where Antonovka seduced me (and abandoned) me to go, we made muffins from rye crackers.Only for a long, long time they pounded fine dispersion from Finnish rye bread, then they made dough from this, baked ... And they served it with whipped cream and sour jam (we had a cornelian cherry podvarka). It was inhumanly tasty, but somehow I did not intend to hammer the persistent Finnish bread - and there, in the professional kitchen, the process took us a lot of time, and at home ...
And here, you have just all this, but also with such wonderful notes - cocoa, rum! And blackcurrant jelly!
